I will probably eat more pizzas between now and my death than chocolate chip cookies. And that is not because I dislike chocolate chip cookies. It's just that as you age cookies in general become the foe of maintaining good health. Pizza can at least be justified as part of a reasonable meal, if you add a big green salad and a glass of red wine.

Pizza is obv great & I eat them more often than burgers (mainly cause frozen pizza is quick n easy meal when lazy, plus I try to limit red meat intake) but there's really only been a few times where I've been all "omg this is SOOOOO good! I can die happily now" while eating it. OTOH, I've always said that a burger + vanilla shake would be my request for a last meal.

post - Pizza ia a more utilitarian food because generally better for you (depending on how prepared and how much consumed) and perhaps more versatile, but to my taste the best pizza does not measure up to the best burger. To some degree that's a function of simple carnivorous pleasure, which I say as someone who eats red meat in relative moderation for an American, but it also has to do with the interplay of ingredients, some of which work better raw in burgers than pizza.

I've realized that what I like most about burgers is the combination of textures and the toppings, not really the beef itself, so I'm fine with a good veggie burger (although those can be hard to find too).

My signature move that gets raised eyebrows from waiters is getting a veggie patty but with the real bacon.

Me too re: the beef itself, except there's this place nearby who's only other location is in Buenos Aires and they have this Argentinian beef and fuck man that is a tasty patty. Helps that they use primo toppings, too. Top 5 burger for me so far.

I think also a lot of restaurants use not great meat ( I mean why would they for ground meat) so even if you want the burger rare or medium rare they won't really leave it that red.

there's a similarly realistic veggie burger made by Beyond Meat that you can get at Whole Foods and I'm sure some other places, it's kinda pricey but delicious, the "blood" is beet juice

the meat is stewed with a load of spices and chopped up with the fat, meaning it is full of flavour and moist too. If you want vegetables you can chop coriander or green peppers in with it, though I prefer not to. The bread is light but never goes soggy or soft. This is everything burgers are supposed to be, and its cheap street food too.

Yes. Naan, then ball of ground beef, rolled thin across the top. Diced onions, tomatoes and pickle relish scattered across the beef layer. Cut a slice horizontally from an entire wheel of swiss cheese, lay that on top. Then some more naan. Substitute naan with homemade matzoh, or whatever.

anyway, pizza seems the obvious choice. garlic + basil + pepparoney hello, more variety, crust is thrown in the air by hairy men. you can put things on it so it looks like a face. also do fractions and serve to friends. burger is just this one type of thing.

imo the best burgers i have ever had have been in Atlanta. used to play a venue called The Earl all the time and they gave bands half price on meals and those burgers were incredible. one time i lived in Kirkwood and got something from a cheap bodega looking place (L & L Snack Shack) advertised as ***STUPID BURGER*** and it was great, just loaded with sauce and stuff.

but i've eaten one too many old, cold, dry, burger patties left over at the end of a BBQ. you need ketchup/mustard just to swallow it down. cold pizza on the other hand is still sort of classic in its own trashy way.

dece burg definitely exists. is just sadly rare. two bells tavern in seattle makes (made?) a decent burger. thick, kind of oblong, juicy (fatty) as fuck, nice char even when rare, served on french bread. good with bacon, ketchup, blue cheese, onions. a fucking mess, but worth it.

several thousand miles away though. meanwhile can get good pizza just about anywhere on the east coast. maybe it's a regional thing.

No matter how a hamburger is accoutered, it always comes down to the good or bad qualities of the meat patty. The rest is window dressing. Pizzas have far more scope for subtle flavor and texture combinations and more opportunities for excellence in ingredients to be rewarded.

The honest-to-god best burger I've ever had was consistently from Donna's Bar & Grill in New Orleans, but that's long closed and the man who made it passed away. It definitely wasn't about the quality of the meat, since he sent us out to pick up some more once and just said "get whatever's cheapest". It was all about the process (I don't know all the details but it involved a cast-iron pan, lots of seasoning, and a lifetime of cooking experience).

problem with mfktz's comparison chart, as indicated in the preceding conversation, is that "american barbecue" is a wide range with lots of regional variety. some people (savages) use "barbecue" and "grill" interchangeably, while others draw a clear line between the two. far as i'm concerned, any meat cooked quickly over high heat isn't really barbecue.

I don't know! The quality of the meat matters, for sure, but in Cubaland we tend to use lots of spice combinations in most foods. I've tasted plenty of burgers with subtle flavors.

Right now it's probably hamburgers for me. There's pizza that I truly love, but Austin, TX, while generally a great food town, is horrible for pizza. Lots of great burger options though, so that's what I go for.

In America, "barbecue" or "bbq" signifies a cuisine in addition to or instead of a cooking implement or social gathering. That cuisine generally involves slow cooking by means of indirect-heat "smoking" (except in some tertiary regional traditions that involve slow cooking via a combination of direct grilling and indirect smoking), and therefore "barbecue" is not an appropriate description of food that is not slow smoked but only grilled on what some term a 'barbecue'.

my preferences for a good burger (i apologize in advance because i realize i take my burgers too/very seriously):

1. quality of the meat -- you can ground your own meat from different parts of the cattle and this is where the difference comes in. the way you raise a cattle is of course important. places like kobe, famous for their beef, the so-called wagyu beef. part of this is of course the level of marbling, which i understand everyone has a preference of, but higher quality meats will have a certain tenderness and flavour to them (the famous "sweet" taste of japanese meat, for example). pre-grounded beef at the supermarket is obviously he lowest quality meat, but has another thing going for it: it is about the ritual and shared experience of being out with friends and family grilling patties. likewise, with cheap beer. both of these cheap options are things a lot of north americans like and prefer because of its ritualistic nature, which is fine by me and i will eat them and enjoy this aspect of it. however, my preference is to eat grounded meat from higher quality parts and cattle, where the fat content (marbling), tenderness and taste are emphasized. this is a monumentally difficult task and something pizza does not have to deal with

2. bun -- another thing that is very difficult due to its varieties. some people like brioche, some people like dessert bread-style buns, some generic dry stuff, maybe even ciabatta. i have had burgers with pastry buns and didn't like them one bit and ruined almost the entire experience. making your own buns, softness, thickness, and flavour plays an important part in balancing out the meat flavour

3. dressings/add-ons -- this is a little easier because my palate is used to bottled/canned stuff when eating burgers due to the meat's complex aroma and taste, it helps cut some of the depths of flavour. however, i will prefer in-house/made ketchup, fresh ingredients such as mushrooms, and non-processed cheese

my slight obsession with burgers has led me to taste many types of burgers in the places i have lived and visited, and while i recognize that there is a lot of subjectivity involved, these are my current favourites in los angeles and the surrounding areas:

1. stout (hollywood)
2. congregation (pasadena)
3. the golden state -- i haven't been in a while though
5. plan check (sawtelle area) -- consistently decent
5. bachi burger -- this was in sawtelle and when i first went to it maybe 4 years ago, it was one of the best burgers i had ever tasted. sadly i went back a few times trying to get that same taste and every time it was worse, til they changed names/ownership to ohana and then everything was disgusting

my favourite butchershops in los angeles:

however, consistency and being able to replicate the same burger experience is difficult. maybe it's my mood and what i ate before that day or week, but my palate does change. sometimes burger joints serve a lemon. but i know i do not hold the ultimate truth and that eating a burger -- at a new establishment or at my regular spots -- is an opportunity to learn something new. there are a lot of burgers out there, and i hope to continue eating many of them wherever life may take me

in the meantime, i hope everyone has a nice good friday and enjoys eating a bit of fish or seafood today

There’s that one burger place in Santa Monica that looks like a barn which is decent enough but I only went once and remember it being very pricey for an exceptionally small burger

Ok, so the impossible burger is in no way on par with a good restaurant burger, but it does do a good job of replicating an overcooked backyard grill-out burger. Or maybe a fast food burger, I don't really eat those enough to know.

It was fine, but for the price ($16 w/fries where I went, vs $13 for the real meat version!) I would definitely not do it again. It seems like it's for a relatively small group of people (moral/practical vegetarians who miss the taste of beef).
