I'm going to a pancake party tonight, and have to turn up with a topping of my choice, something preferably outside the oppressive rockist pancake topping canon (you know, maple syrup and the like).

What do you people recommend?

Although I did know someone who liked to put whipped cream and ham on pancakes. Although it's not rockist, it looked revolting and I could not in good conscience recommend it.

Bonus question, what is a Shrove?

Shrove Tuesday is the Tuesday following Quinguagesima Sunday, and preceding the first day of Lent, or Ash Wednesday.

It was formerly customary in England, on this day, for the people to confess their sins to their parish priests, after which they dined on pancakes, or fritters, and the occasion became one of merriment. The bell rung on this day is popularly called Pancake Bell, and the day itself Pancake Tuesday.

I am without sin, so therefore should need no pancakes. Ring thine own pancake bell.

But yes, I am intrigued by anything featuring dark rum.

mmmmm, maple syrup, its almost worth going to the forests to watch them tap the trees in spring.
Brown sugar, coco powder, water and I forget what else (butter thanks anthony), boil it down to a syrupy level and pour ontop of pancakes that have been loaded up with chocolate chips.

Alternatively cook some susages, breakfast ones are best but bangers will do in a pinch and wrap your pancakes around them (use a toothpick if your feeling fanc y) and douse with liberal amounts of maple syrup. mmm piggies in a blanket.

Mad - I never knew that. As a kid, I always thought it was only irreligious wusses chickening out of the hard slog of lent that add sweets etc. on Sundays. Of course, in Ireland, St. Paddy's Day was always a day off from the Lenten sacrifice anyway - killing our prepubescent brain cells drinking cider in parking lots after watching crappy parades...

I ate with fantastic friends last night and they provided no pancakes. This was more than made up for by fabulous company, obv.

However, some batter remained at home when I returned, so late-night pancake-age was totally on the cards! Hooray! I conducted a piece of empirical research on the burning 'malt vinegar vs lemon juice' issue.

I am happy to report that pancakes + sugar + either vinegar OR lemon = heavenly. I am sorry to report that the lemon version is perhaps slightly better. Curses.

Thin pancakes just have a higher proportion of milk in the mix - thinner batter. Also, fluffy American pancakes have raising agent i.e. baking powder or somesuch to make them poofy and able to soak up maple syrup. Yum. I'm much better at breakfast pancakes than crepes, but they are traditional for Shrove Tuesday. Damn those French.

I've vaguely invited people over to eat pancakes. If nobody can make it then I'm having all lemon, all sugar, all the time. But I might try something with fried apples and cream, if I have company.

Fuck a savoury pancake though. Pancakes are pudding.

I use buttermilk instead of regular whole milk... and I seperate the egg whites and yolks, beat the whites until they're really fluffy and then add them into the batter... also, vanilla extract.

I like real fruit, or a nice fruit jam, on pancakes. I also am a fan of the now-mostly-forgotten buckwheat pancake. I make them with buttermilk. Real maple syrup is nice, but even Grade B syrup is too expensive for my blood. My delicacies must be cheap ones.

NOTE that i have not tried this recipe but eagerly anticipate it:

3 cups all-purpose flour
1 cup packed dark brown sugar
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup water
1/2 cup brewed coffee, cold or at room temperature
4 large eggs
1 stick (1/2 cup) unsalted butter, melted and cooled
1/4 cup fresh lemon juice
Vegetable oil for brushing griddle

Whisk together flour, brown sugar, baking powder, baking soda, salt, and spices in a bowl. Whisk together water, coffee, eggs, butter, and lemon juice in a large bowl. Add flour mixture and whisk until just combined. Let stand 15 minutes (batter will thicken).

Brush a griddle or 12-inch nonstick skillet with oil and heat over moderate heat until hot but not smoking.

Working in batches of 3 or 4, pour 1/4 cup batter per pancake onto hot griddle and cook until bubbles appear on surface and undersides are lightly browned, 1 to 2 minutes. Flip pancakes with a spatula and cook until cooked through and edges are lightly browned, 1 to 2 minutes more. Transfer to a platter and loosely cover with foil to keep warm. Brush griddle with oil between batches.

Pancakes were good. Enjoyed with the old-school lemon and sugar topping and, as hoped for, very nice quality Canadian maple syrup.

The over-cooked chocolate cake with the squigy centre and the chewy, nigh on rock-hard in parts, outside casing was surprisingly addictive too.

I went with the very conservative maple syrup and lemon juice/sugar choices last night. Although, we've got a jar of preserved cherries in the fridge, so I did consider blitzing some of those up with a bit of orange juice.

We found a good batter recipe this year: it uses melted butter for some of the liquid. Then you don't need any oil in your pan.
