In the Midwest, I have discovered jowl bacon, which I guess is basically fried pig face. But in a GOOD way. (It looks like it's 98% fat before you cook it, but then it cooks up super-crispy. It tastes a little different from regular bacon, but I don't know how to explain in what way.)

Does anyone know what the story is with nitrate-free bacon, by the way? How is it cured, since natural curing processes result in the formation of nitrates and nitrites? Do they just not pump in MORE n&n's like they would ordinarily? Or is it cured in some unconventional way? Based on a preliminary sampling, it tastes tasty, if a bit sweet and meaty.

This is what British bacon looks like. It's not like the streaky Oscar Mayer shite I was brought up on in the US, which I might put on a Cesar salad but only if i was desperate. I think you'll agree that the British version gives you more meat and therefore a more satisfying sandwich. And obviously it's better if it's smoked (smells better during cooking for a start).

(vegetarians: mashed avocado on toast with mayo, soy and a bit of smoked paprika plus loads of pepper will go some distance to quenching your bacon envy).

So I decided to feast myself today and I rubbed some bacon with a little garlic pepper (okay, a lot) and fried it up. Then I fried up some more bacon with garlic pepper. Now I have a pan with like 1/4" of piping hot seasoned bacon grease in it. So I decide that eight strips of bacon isn't enough for me so I take two frozen bratwursts out of the freezer (the skinny pale brats, not the Johnsonville ones, those are two good for dangerous experiments), run warm water over them for a bit and toss them in the hot bacon fat.

Minutes later with lots of prodding and poking of holes in the sausages to encourage cook-through I now have two completely excellent fried brats, fantastic buttery bacon, with a side of kimchee and two cans of MGD to wash it down. Is your life better than mine? No. It is not.

next time I'm going to get some fresh johnsonville beer brats and throw them in pre-punctured so they cook through lightning fast, and I'm going to have a proper salad instead of pickled cabbage and red pepper. The bacon will be shredded and tossed with the salad. Also there will be feta cheese and sriracha sauce involved.

I'd like to point out that having more 'meat' to your bacon doesn't make it 'better', it just makes it more like a regular pork dish and less like the American version, eg SMOKED PIGGIE FAT.

Poking holes in sausages is a last resort when for one reason or another the outside has turned black and well crispy already but the inside is still underdone. It's a perfectly acceptable measure when necessary. Otherwise you just end up with wasted sausage.

So tonight I did the garlic pepper bacon thing again, but only six strips this time, and I made a sandwich out of them with some pepper jack cheese and a toasted onion + poppyseed roll. Then while I was chewing on a bite of that I took a chicken breast out of the freezer and defrosted it in a bowl of water in the MW for about five minutes. Into the hot grease. BOOM! That shit was noisy as hell. I'm lucky I didn't burn myself. The chicken took a little longer than I thought it would but it turned out fantastic. Wasn't even dry like I thought it might be. I squirted some Sriracha sauce on it and had it for dessert with two pints of Boddington's.

In reading this entire thread while bored and starving at work, I don't think I came across a single non-vegetarian person who said they didn't like bacon (there probably were a couple but who cares what they say anyway?).

i liek bacon but this stuff -- uncured slab -- looks gross. but from what I read pork belly is all the rage in new york's finer restaurants. any thoughts from ILE? also lardo, cured pig-fat, which I can't imagine eating.

i love pork belly, but it's incredibly rich (obviously). i like it best when it has an even meat-to-fat ratio and is somewhat crispy. the stuff i got at fette sau was nearly 100% fat and not porky enough.

if you make up a paste of olive oil, garlic, salt and smashed up fennel seeds, rub it all over the flesh side of your slab of pork belly - chuck it in the oven at a very high heat for half an hour, then a medium heat for another hour and ahalf, you'll have a meal fit for any king, if the skin hasn't crisped, just whack the heat to max till it does. If you want some gravy, geglaze the bottom of the pan with some dry sherry, white wine or even cider.
