Does anyone know what the story is with nitrate-free bacon, by the way? How is it cured, since natural curing processes result in the formation of nitrates and nitrites? Do they just not pump in MORE n&n's like they would ordinarily? Or is it cured in some unconventional way? Based on a preliminary sampling, it tastes tasty, if a bit sweet and meaty.

british bacon comes in a variety of cuts, somked or unsmoked and even at its very worst is far more tasty and succulent than american. trust me, every british person i know (except of 2 jews and 1 moslem) who has visited america/lives there agrees with me. every american friend i have ever made bacon sandwiches for in the uk agrees, too!

This is what British bacon looks like. It's not like the streaky Oscar Mayer shite I was brought up on in the US, which I might put on a Cesar salad but only if i was desperate. I think you'll agree that the British version gives you more meat and therefore a more satisfying sandwich. And obviously it's better if it's smoked (smells better during cooking for a start).
(vegetarians: mashed avocado on toast with mayo, soy and a bit of smoked paprika plus loads of pepper will go some distance to quenching your bacon envy).

Why does everybody judge a nation's beers based on the massmarket exports and ballpark draft piss alone? If I go to any country in the world and order the cheapest thing on draft I'm going to get sparkling urine and that's a fucking fact. If you give a shit about beer you find a decent liquor store and buy several different kinds of small locals, or you go to a better bar and try some of the micros on tap.
NONE of you can talk to me about beer except perhaps the Northwesterners, I live within a stone's throw of so many excellent microbreweries and brewpubs (not to mention the Brickskeller, home of the world's largest bottled beer menu (1100) and Max's on Broadway, which has 166 taps). i love pork belly, but it's incredibly rich (obviously). i like it best when it has an even meat-to-fat ratio and is somewhat crispy. the stuff i got at fette sau was nearly 100% fat and not porky enough.

I picked up Beyond Nose to Tail yesterday which recommends eating thin slices of lardo wrapped around walnut halves. if you make up a paste of olive oil, garlic, salt and smashed up fennel seeds, rub it all over the flesh side of your slab of pork belly - chuck it in the oven at a very high heat for half an hour, then a medium heat for another hour and ahalf, you'll have a meal fit for any king, if the skin hasn't crisped, just whack the heat to max till it does. If you want some gravy, geglaze the bottom of the pan with some dry sherry, white wine or even cider.

My wife's stepdad (what is he to me?) bought some bacon chocolate bar at Trader Joe's. I had a bite, and after the first hint of smokiness I suddenly got the sensation of biting into chocolate filled with pork fat. Which was a pretty unappealing sensation.
