Take a crusty baguette.
Slather on some Dijon mustard (both sides).
Add little hints of mayonnaise throughout (both sides).
Take deli-sliced smoked turkey breast.
Lay generously on one side.
Take some pepper bacon, fried until crispy (no added oil).
Lay generously on other side.
On turkey side, add lettuce.
Also add slices of tomato.
Close up sandwich.
Cut in half.

The challenge really is to stick as many things from the fridge between two bits of bread and PRESS down as hard as possible.

Although I have stated granary bread, I'm also partial to white door-step of late. Also, notice how only one side of the sandwich is buttered. Also also, please note sandwich must be cut not quite completely diagonal, but more a jaunty mad angle to facilitate maximum munching.

The above sandwich was one I used to get from this cafe called Battista's on Charing Cross Road; instead of 'panini' call it by its proper name - ROADKILL. Cafe is gone now, however.

I changed it up from a sandwich they make at Bayonne in New Orleans -- they use smoked duck and pickled red onions, I substituted bacon.

It's good! The hot bacon makes a little of the spicy jelly caramelize or something. It's like peanut butter and jelly, but uh oh, surprise spicy bacon!

Do they really? God. It's regional, I wouldn't call it a delicacy. It's like the cheapest form of lobster you can get, in an area where lobster's cheap to begin with, when it's in season.

Theoretically they could be done really well. You want to boil the lobster in water with actual seasoning in it, like lemons and celery and garlic and cayenne, and then serve it warm, not cold, with no mayo, on a decent roll dressed with Worcestershire and Tabasco and celery salt -- that would be good. The lobster roll in its native form? No damn good.

Oh, for heaven's sake. Seriously, the lobster roll is the perfect symbol for everything I could never stand about northofBoston cooking: lack of seasoning, fear of texture, bland flavors emphasized by virtually unflavored fats, and everything's boiled.

Besides: between New England, with its steak bombs and meatball grinders, and New Orleans, where fried seafood poboys are easier to find than hot dogs or cold cuts, I think sandwich culture has pretty well established its friendliness to more time-consuming preparations.

There's a pragmatic ceiling, I think: assuming not all foods are equally or identically compatible with all other foods, and that the set that a pairing of foods is comptible with is equal to, or more likely smaller than, the intersection of their respective compatibility sets, the first food you pick limits in some way the foods you can pick next, and so on down the line. Once you reach a certain point, your only real options are to a) add a food that really doesn't go well with what you already have, or b) add something that blends in all but unnoticed (if you already have aioli on the sandwich, you can add mayo without ruining it, but why bother?). There's not much point in doing either, except for the sake of doing so.

[1] See, this is what I mean about ingredient-unit collapse. I can't count it as more than two ingredients, and probably only as one, since the roast beef is in the gravy, as per New Orleans poboys. But it was made with beef, beef broth, lamb demiglace, red wine, carrots, celery, onions, garlic, green chiles, black pepper, tomato paste, and bay leaves. If "gravy" didn't exist as a name for me to hook on it, possibly this could count as a dozen ingredients.

Meanwhile, winterland's adventures in the kitchen continue ... ?

Matt and I attempted some sort of bruschetta on our griddle thing yesterday lunchtime and ohmygod the smoke alarm went off and unbeknown to me it's on a circuit with the whole building (7 more flats) and as I have no access to the upper flats where the alarm system is, I was powerless to reset it myself. So all my neighbours appear on the basement steps yelling. And then I have to look like a total ponce when explaining that I set it off 'making bruschetta'.

omg late late summer means PATTY MELTS for dinner!

-1 sourdough english muffin, split open and grilled inside and out
-enough extra sharp cheddar to fit on the open faces of both muffin pieces
-1 onion, sliced thickly and fried up in olive oil, salt, pepper, CRP, etc (when done, remove from pan and wrap in dry paper towels to remove excess oil)
-1 hamburger patty (nothing macho, just a small one), fried in leftover oil from onions until medium rare
-bbq sauce

melt the cheese on the grilled bread, add burger patty, onions, bbq sauce, plate up w/ the remaining fried onions, and EAT!

pickles optional. i didn't have any.

the other day i saw a picture of a turkey/cheddar sandwich w/ green apple slices on it. this sounds really good to me. has anyone tried an apple on a sandwich before? c/d?

THIN layer of saukerkraut
Swiss
Corned Beef
Swiss
Marble Rye

grill the two meats to warm

warm up the sauerkraut

as meat is STARTING to brown, add cheese

Take the two halves and build, bread down, in frying pan on low heat with about a half tablespoon of butter melted therein. Add the third piece of bread to one, leave other "open face"

flip "closed face" to evenly grill both sides, and then add final cheese to open face, put closed face on top, and take off grill.

Serve with root beer and favorite type of snack chip. Eat again in a week.

Cold. Miserable out. I decided to go have my new fave sandwich (mentioned above) for lunch. It is a sad, sad day. They replaced the paneer cheese with melted (what tasted like) Kraft singles (blerrgh) and added lots of sliced beets in lieu of peppers this time 'round. Nothing good lasts forever.

Started getting sandwiches at the cafeteria salad bar. Here's what it's been lately:

cucumbers
american cheese (or provolone if i'm lucky)

Accompanied by a can of CocaCola and Fritos. There are kinda limited options at the salad bar (on very unlucky days there is no hmmus), but inspired by

Whole Foods is doing a nice cheddar with cranberries in it. Not overly sweet unlike some of the softer cheeses you get with berries/apricots in.

I've always been partial to a mild chicken tikka with crunchy lettuce. Am I likely to find this in San Francisco?

I don't make sandwiches for myself very often, but I do go to Atlanta Bread Company once or twice a month, and have figured out my perfect sandwich through much trial & error:

Multigrain bread, thick slice
Romaine
Provolone cheese, thin slice
Turkey
2 small strips of bacon, very crispy
Avocado
Red onions
Salt & pepper
Another thick slice multigrain

Basic, but delicious. I may have to start experimenting with tomatoes, though, for some reason they never really clicked with me until this year.

After assembly it's back in the frying pan until the bread is a greasy brown and the cheese is melted inside the sandwich.
