I have heard so much about the restaurant—its experimental chef, Heston Blumenthal, his daring combinations, and intensely expressed philosophies. The chef, via a table card, invited us to create our own childhood fantasy foods. He mentioned one of this own: Sardines and toast, which he offers improbably as a sorbet flavor.

Anne imagined a dispenser of Pez that would shoot little foods into our mouths and those soft wax "Coke bottles" that as children we bit to get at a horribly sweet, incredibly bad liquid. Francois imagined a food made from Pop Rocks, those little granules that, in his childhood, kids placed on their tongues to feel the sputtering and crackling.

Then, incredibly, after we had tasted amuses-bouches of white chocolate sorbet in carrot juice and little jellies of beet and orange, they arrived—Pop Rocks sprinkled over tiny cubes of beet that accompanied Francois' guinea hen; umami broth with mackerel; cauliflower risotto dusted at the table with cocoa powder.

For dessert, we passed over the smoked bacon and egg ice cream in favor of mango and Douglas fir puree with beets and green peppercorn jelly.

OK, so this is a real recipe that I came across while browsing the Woman's Institute of Domestic Arts and Sciences Library of Cookery:

COFFEE JELLY
(Sufficient to Serve Six)

2 c. clear, strong coffee
1/2 oz. or 2-1/4 Tb. unflavored gelatine
1/2 c. cold water
1 c. boiling water
Three-quarters c. sugar

Prepare the coffee freshly and make it stronger than that which would
ordinarily be used for the table. Be sure that it contains no grounds.
Soak the gelatine in the cold water, and dissolve in the boiling water.
Add the sugar and coffee. Pour into moistened molds and allow to cool.
Serve with sweetened whipped cream.

There's a lot of nastiness in the aforementioned volume, but damn!

i get that the premise of this thread is putting flavors together that don't go together but i'm going to disregard the thread rules to tell the following anecdote:

mr. cat & i were discussing the price of eggs because we are boring old people. i recalled that he had once """scored""" multiple sacks of freeze dried egg crumbles, which were currently lurking in the far depths of a kitchen cabinet, and i offered some suggestions as to how we could best utilize this resource. perhaps a quiche, perhaps a strata? mr. cat stated with some surprise that he had intended for us to eat them as is, and that freeze dried egg crumbles might be a convenient and nutritious snack for hiking or general errands around town.

i stared, uncomprehending.

he continued that we could simply gulp down a handful these dusty-ass expired government surplus dehydrated egg product chunks, follow them up with a swig of water, and it would be just as though we had eaten real life eggs.

then i laughed really hard and made him promise to let me take a video of him if he ever actually does this.

well, that was my anecdote. in retrospect it was neither as amusing nor as disgusting as i thought it would be. you might hope that if someone is going to butt into a legacy thread with a story that is only glancingly relevant then they would at least have the etiquette to make that story enjoyable on its own terms, but in this i have clearly failed. am i going to post it anyway? i am indeed. then i will settle into a bathtub filled with steaming rehydrated eggs for a long soak and a serious reappraisal of my ilxing strategy. i'm sorry, that's a lie. i don't have a bathtub. the best i can do is sit on the floor of the shower and pour buckets of hot egg over myself.

i made banana cake & frosting in a separate container to better accommodate the differing frosting quantity preferences of my household and beloved mr cat, my best mr cat, he -- i should have been more specific when he asked me where the frosting was. i just said it was in a little round container in the fridge but i should have explained further, and now... he is eating a piece of cake with turkey gravy on it. he didn't want to waste the cake after he realized what he had done. i love him so much
