The thing is, everywhere I eat now it's always gourmet tacos in soft shells with grilled chicken and chipotle sauce with this that and the other fresh ingredient. I do not feel that they're are actually better than good old McCormick's mix with ground beef and hard shells (*with* iceberg - a lettuce unfairly maligned by the self-hating bourgeois!). They're just different. I'm a bit sick of this pretentious and absolutist tyranny of the "gourmet".

(Seasoning packets are practical -- if you don't use them and don't make tacos all the time or have a very well-stocked kitchen, but still want the classic taco filling, you'll end up compromising, and doesn't that ruin the point of not using the packet? -- low-sodium ones are even better, so you can increase the seasoning ratio without making it salty.)

I'm kind of with Spencer on this one about the deliciousness of white trash tacos - hard shells, cheddar cheese, jarred salsa, seasoning packet, iceberg lettuce. Mmmm. Of course, nowadays, I'm using soy ground beef, so that makes it a little more bourgouis, but what can you do?

It's really good, the name is on the tip of my tongue but it's not coming to me -- you basically stack the ingredients up on a hot cast-iron pan and then stir em up a bit until the cabbage cooks down and the chicken is cooked through (by which point the sauce has coated everything and the sweet potato is softened). Really simple but tasty. The kind of thing that should be fast food here.

That's the problem, I'm not sure -- it looks almost jelly-like in the photo, so I use Vietnamese chile-garlic sauce (the stuff that's like sriracha, but in a jar and chunkier with seeds), a little brown sugar, soy sauce, and sesame oil, and when I have it in the house (I can't find it locally) I add a spoonful of Tabasco pepper jelly. I wish I could find sesame leaves, I'm not even sure what they taste like.

Avocadoes are something I've only just started liking recently, strangely. I think maybe I hadn't been good at picking the good ones, before, or hadn't let them ripen enough (avocadoes are one of the few fruits that don't ripen until they're picked). It reminds me a bit of the dressing for japanese salad, crossed with hot sauce. So, a bit vinegary, sesame-y, and hot yet slightly sweet? It might be sold at the Korean grocery store, but those pre-packaged sauces are always so full of msg and fillers. Will experiment. Thanks!

Tonight I made delicious tofu/ground pork stirfry concotion. loosely based on ma-po tofu, but I didn't have an exact recipe for it. take approximately equal parts mushrooms, tofu & ground pork, marinate in ginger/soy sauce/garlic/cayenne pepper. stirfry. eat deliciously.

Louisiana makes a habanero sauce, too! I have mixed feelings about the complicated world of habanero sauces, and about the empty gap between "hot" and "very hot" vs the crowded continuum from "very hot" through "the special Dave's Insanity batch not actually designed for human consumption," but Louisiana's habanero sauce is pretty good and not so hot that it can't be used as a condiment.

Hot Italian food, hm. Well, I've had hot italian pepper sausages, but yeah, Italian hot is more of a black pepper hot. And a specific kind of red pepper, I guess. But that doesn't always go with Italian creamy/herbal, you're right. Oh, and enough garlic is hot. I guess it's sometimes best to let the oregano and basil do what it does without spicy interferance.

Yeah, but it's still not quite the same -- you can't add arrabiata or fra diavolo sauce willy-nilly to other things like you can Tabasco, sriracha, and whatnot. It's not the lack of heat in Italian cooking -- vinegar chicken is Italian, buffalo wings come straight from it -- so much as the lack of the hot sauce niche.

I often get a flank steak, marinade it in Mojo criollo, cook it on the grill, and slice it up onto tacos with onions, sour cream, homemade guac, lettuce, cheese ---either kraft shredded mexican or the crumbly quesa fresca stuff --, some sort of pepper that's been on the grill, and salsa brava. One flank steak is usually good for at least a dozen tacos.

I love that the Mexican grocery store down the block has "carne por tacos" that is already chopped up and ready for the frying pan, and it doesn't cost any more per pound than regular skirt steak.

just have to heat up some beans, fry some onions and peppers, lightly fry a few tortillas, then add grated cheese/sour cream/salsa/hot sauce/meat if you must. don't worry about portions because you can just stash the extras in the fridge and you're already 90% of the way to your next taco morning
