not technically true! all those italian words with doubled-up consonants are meant to be pronounced differently than those with single consonants.

for example, if the word "tomato" were spelled with two ms, you'd linger on the m sound twice as long. "formaggio" (aka "cheese") hits the brakes on the g sound as well.

it's been a while since i've heard an italian-from-italy saying "pizza," but i'm sure he would linger on that second z -- like "peetz-zzzzzzzzza" (less exaggerated, but you get my point).

49a) Ian's Pizza in Madison WI is indeed the shizza. Weird slices that NYC would sniff at but which are great, e.g. chicken cordon bleu pizza (actually all pizzerias in Wisconsin seem to sell this), taco pizza, mac and cheese pizza, steak and fries pizza (have not tried this last but apparently it is a best seller.)

49b) DeLorenzo's Tomato Pie in Trenton is fantastically great but apparently is technically not pizza on account of the tomato is atop the cheese rather than the reverse.

49c) Glatt kosher pizza of all types causes grievous indigestion due to absence of crucial (but treyf) rennet (= calf stomach extract.)

49d) Of course the best pizza overall is the as-yet-unmentioned Cheeseboard in Berkeley CA.

it's been a while since i've heard an italian-from-italy saying "pizza," but i'm sure he would linger on that second z -- like "peetz-zzzzzzzzza" (less exaggerated, but you get my point).

you would actually linger on a [t] sound, they don't use a [z] (like in buzzzz) at all - the ipa would be [pitsa]. interestingly, for the plural pizze, you'd emphasize that [t] sound more - [pit:tsa] (the colon representing a slight linger/break/lift).
blame that on my year of italian diction taught by an ex drag queen who seemed to get a little too excited over saying the number quindici...

Weird slices that NYC would sniff at but which are great, e.g. chicken cordon bleu pizza (actually all pizzerias in Wisconsin seem to sell this), taco pizza, mac and cheese pizza, steak and fries pizza (have not tried this last but apparently it is a best seller.)

OTM. I went to Ian's last night (or early this morning, rather) and had a kalamata olive slice (no olive pieces but it has an olive base instead of tomato), and grabbed a tomato/basil/mozzarella (it's got the big pads of mozz, not shredded) slice for lunch today and a penne pasta slice for my girlfriend.

Well, what I do is I sautée some shallots and add them to the goat's cheese while they're still warm. Add a little S&P and some light herbs (don't want to overpower it with anything—I suggest just some flat-leaf parsely and basil) and use that as a sort of sauce. Slice the pears and put them on the pizza, put shaved reggiano on the pears and then put it in the oven. I put olive oil on at the very end.

It's actually Uruguayan, like the maté. I don't claim to understand it, but the pizza is very very good. The proximity of Union Square means Matt can walk down there in the morning and scoop up a bunch of in-season ingredients. I really like the summer stuff especailly. They had one outrageously good combo this year of like breadcrumbs, sweet corn and smoked mozarella.

Jon, the maximization of oven usage isn't really a factor, it's a just that it's a different way of doing it and they really liked the idea. They also found the crust stays crispier with an oblong size. Plus they're obviously obsessed with Uruguay for some reason.

i am not a fan of buying by the inch.

When eating pizza, I think the considerate thing to do is to order a plain pie and a second pie, perhaps smaller, with a simple topping or combination. You don't want to disguise the delicious pizza base. I am typically not a fan of weird things on pizza, like marinated chicken and pesto and broccoli and carrots and shit. Pizzas can be topped by the following: pepperoni, sausage, mushrooms, anchovies, pineapple, olives, and THAT IS IT!!!

I really think it's more a matter of what specifically you're putting on the pizza than whether or not you put non-traditional toppings on pizza. For example, BBQ chicken on pizza is extremely wrong, but that's because putting something already flavored with one sauce on top of something that's flavored with an entirely different sauce is basically an admission that you have no idea what the fuck you're doing.

jody is totally right about the overabundance of toppings on many of today's "gourmet" bullshit pizzas. here's a paragraph from a review i did of a pizzeria that was so, so ass-backwards (plus horrible herbed crust):

the Williams is made with a base of creamed leeks, instead of red sauce, and is topped with prosciutto, dates poached in red wine and St-Agur cheese; the Lolita has a tomato base, and is topped with lotte fish, mushrooms, fennel, and gruyere; the MaraÎchère has a base of onion compote and creamed leeks, and is topped with artichokes, spinach, red peppers, olives, and chèvre; and the Grenoble tops the creamed leeks with nuts, marinated grapes and St-Agur.

the post-bite pizza is meant to be scooped up/awkwardly corralled with little pizza calipers made of petrified lard, which you then combine with creamy garlic sauce for a post-post-bite pizza snack. i'm pretty sure this is all on the pizza hut website.
