At Flying Pie in Boise they had cut-up chunks of cream cheese on the topping & they'd bake to be all firm on the outside & soft yum on the inside. OMG yum. And Basque chorizo, which I really miss. But srsly as much as I love spinach, artichoke hearts, sun-dried tomatoes and many cheese varieties on pizzas, Papa Johns, Pizza Hut and Domino's don't got it.

At the place where I used to make pizza for a living we had one that was diced chicken marinated with olive oil, salt, basil, oregano, garlic, and pepper. It was made into a "white" pizza - no sauce, just cheese and broccoli. After a while, the shit basically sold itself, occasionally it was very hard to keep up with demand.

My topping choice, if there can be only one, is pepperoni.

I learned upon arrival in NYC that this is not true. Not that I'm blaming anyone -- in a city of quick one-dollar slices on every corner, you don't expect high quality -- but most of them toss cheap raw pepperoni on before doing the one-minute slice warmup, and the pepperoni turns out ... non-good. Much prefer that crispy curled-edges pepperoni you get from full pies from full ovens.

Thus, Top Left Quadrant - Top Quality, first rate pizza that COULD have unique ingredients. Key Example - Ham and Pineapple Pie

Top Right Quadrant - Pizzas that try to do too much with potentially creative toppings, and fail. Key Example - BBQ Chicken Pizza

Bottom Left- Top Quality, but just ODD. Key Example - Mashed Potato Pizza.

I have become increasingly fond of wilted greens even on pizza, but only if they bring some interesting flavor. When a dash of their bitterness cuts a sweet (tomato) or aromatic (truffle oil) flavor, it works for me, but otherwise, I basically agreee with Tombot.

Egg on pizza, baked in the oven till its essentially sunnyside up and cut so the yolk mixes in with the sauce, is actually delightful. I think one of the things that makes me very suspicious of a lot of American pizzas, apart from the often abysmal quality of their baisc ingredients, is the expectation that a pizza will be your meal, your main dish. To me, if it's not a slice as a little snack on the run, it's either a table's appetizer to be split or a secondo but I'll probably still get a proper main afterwards. Even when I do get pizza for dinner at home, I don't like it to be smothered in stuff - it makes the pizza lack gustatory definition, obscures the taste of the crust (often making it soggy and flaccid, too), and makes it too heavy for my tastes.

Yeah why not, thinly sliced potato covered in oil, rosemary and salt and garlic is heavenly.

other things I also like (steak, fish, chicken, eggs, potatoes, pasta, most leafy greens) are about 10,000x better when not wasted atop a bunch of cheese and bread and sauce.

As with the above, the idea of some of these ingredients is that you wouldnt smother them in tomato sauce and mozarella. A good, thin, cripsy woodfired pizza base layered with a few key ingredients that marry well together (like the above potato thing, or roast capsicum and semi dried tomatoes with fresh herbs, for eg) is fantastic.

I fear I would not like american pizza much. It seems to be all about the dough and cheese and less about the toppings or good thin pizza bread.

That said I LOVE really cheesy pizzas. the Lucky Coq bar down the road makes this amazing blanc pizza that is mozarella, gorgonzola and marscapone, and it just tastes like rich buttery oily creamy goodness all over a crispy thin base. No tomato, no extras.

They make an awesome chocolate and cream cheese pizza too.

P.S. the problem with places where a certain foodstuff is cheap, fast, and omnipresent is that one of two things happens -- either

(a) the quality gets bad because it's just an on-the-run staple that you don't REALLY care about (I would say this is true of many NYC streetcorner pizza places, just like with NYC Chinese takeout or whatever), and then it becomes kind of a weird thing to hold up as how that food is SUPPOSED to be done

or

(b) every place that serves the thing decides that it needs to differentiate itself with its own cute spin on it, which is (for instance) why it sometimes seems almost challenging to get a traditionally constructed Reuben sandwich or eggs Benedict in Manhattan

What Michael White is describing sounds awesome. I'd like to reiterate that I only really like pizza when the ingredients are of a decent standard, the crust is indeed thin and crispy (this is important) and the tastes are delicate. The reason these outlandish concoctions work is that they don't pile mound upon mound, but tincture upon tincture.

There's a place near me that does various combinations of ham, linguisa, onions, sauerkraut, cheese, and mustard based sauces. All these are pretty good. Their regular pizzas kind of suck.

Pizza in the Pacific NW seems to be pretty fucking dire as a general rule. It's like people were told of the concept of pizza and made one without ever having eaten one, so they have no idea that they really don't know what they're doing.

DUDE did you have to season your stone w/ oil or anything before you used it? I have one, but every time I've tried heating it up it starts smoking really badly, so I give up and use a pan.

i haven't made this for awhile, but here is my dough recipe:

1 cup lukewarm water
2 1/2 tsp yeast
1 tsp salt
1/2 tsp sugar
4 cups flour
1 tb olive oil
optional: cheese, red pepper, etc.

i let it rise in the oven with the light on but the heat off, and stretch it out by hand (not roll)

the best and most important pizza-making advice i can give you:

-- brush a lot (a lot) of olive oil on the crust before you add the toppings, and then spray a little more on top when youve topped it.

--use a ton of flour on the surface where you're kneading the dough so it will slide off easily onto the stone

biggest problem is that it clumps up, so if you aren't careful, you end up with a chunk of bricklike "parmesan" that functions mostly as a mouth dessicant.

The shiny blackness is the key to the pizza stone. I inherited mine from my mom so I don't what caused it to get this way.

And I often make pissaladiere with it - carmelized onions, anchovies, olives, olive oil, some fennel seeds. No cheese. It's great, but not necessarily pizza. But maybe closer to pizza than some atrocities.

As for the original question, Abbott said upthread that she left off onions and jalapeno, which is actually what I would order on shitty Papa John's pizza so that there would be some flavor action going on. If it were super-fancy, supergood pizza, then I'd probably just go Margherita...if it were a relatively good unpretentious neighborhood pizza joint, then I'd go with olives maybe...if we're talking weird California-type pizza, maybe artichokes and fresh tomatoes.
