More evidence to support my above theory re: attorneys here: The sun bounces off the windows in the building next to us and right into our eyes, so one of my colleagues wears awesome blue blocker shades while he works and it is loud sometimes so he wears these huge firing range ear drum protectors and then when he goes to the bathroom or whatever, he just tools around in the eye/ear gear without taking it off first. He's really nice, though.

i made chicken soup last night and then today, when i went to warm some up to eat it, it was like -- what was it like -- it was the consistency of snot. it looked truly disgusting. i heated it up anyway, and it tastes fine and the consistency went back to normal.

am i doing something wrong or is this just what happens to chicken soup? i can recall my chicken soup being quite this vile on the second day in the past...
i did use a different noodle this time. (little cous-cous-like bosnian blobs from devon market instead of vermicelli)

I've only used egg noodles when making chicken soup, and I didn't have that result. It really sounds to me like the Bosniak blobs might be the culprits. Did you use a fryer (chicken) to make the broth, or a bunch of thighs, or anything? Seems like it'd have to be a really fatty chicken to have that be a factor.

first i roasted the chicken (whole chicken) and then we ate some of it for dinner, then i boiled what was left of it. (most of it, really)

after a while i picked off the meat, kept that separate and then boiled the bones/carcass for like 2 hours.

it was oddly satisfying.
fyi - today i saw a whole chicken on sale at devon market for $3.73.

Naw, Amanda, that's pretty normal. Jesse and Evan are correct re: chicken fat and starchy noodles. Chicken fat gets kind of waxy hard when it's cold, while starch gets kind of gelatinous when it's cold. You can always thin it out with a little broth when you cook it.

You can eliminate some fat if you take the skin off the chicken before you make the stock. So in your case, after you roast it. Usually I will brown the chicken with the skin on for about five minutes on the skin side and four minutes on the other side, then pull the chicken out and put it on a plate, remove all but like a tablespoon of whatever fat is left, then saute the veggies in that. After the chicken cools, I take the skin off (it's fairly easy when it's crispy from the first go round in the pan), put the chicken back in the pan, cover it with water, add my bouqui garni, and let it simmer for however long.

There's still some fat, but not anywhere near as much. I hate skimming fat. It just feels like the most pointless, doomed to failure task in all of cooking. No matter how much I skim, it is always STILL THERE. And fuck those fat separators, as they require too much finagling and straining and pouring and futzing.

by the way - i knew both of those things about the starch and the fat, i just wondered if there was something i should have been doing to avoid it. (aside from not using noodles and being more fussy about the fat)

Try cooking the noodles separately, then add them to soup.

As long as you don't boil the skin with the rest of the chicken, you can do whatever you want with it. Unless you are employing my second method, in which case DO NOT EAT because that chicken is not cooked enough.

Some days ago, I went to the stadium in Chicago to watch a soccer game. It was raining outside, so it was cold. But when we arrived there, I saw a lot of fans there. And they were holding a big party. They wore all kinds of clothes with red or Chicago fire. They drunk beer, ate hot dogs, talked to others and sung songs of Chicago. They were all excited instead of feeling cold. Later we went in and found our seats. But the fans in this zone, they never sat down. They were standing, waiving the flag of Chicago and singing "fire, fire, Chicago fire." Before long the match began. They players of Chicago did a good job. They made 5 gooals. Everyone was happy. It still rained, but I was hot. I forgot cold, forgot tired and forgot anything but excited and happy. Finally Chicago won. People started to celebrate it. Fireworks, applause and the songs all together. It made the most beautiful sound in the world, I believe. We all had a good night. Since then I love Chicago fire, I love this game."

Amanda, I highly recommend the Lodge enameled cast iron dutch oven. It is heavy and Jeff complains heartily when he has to wash it, but wowie it is a quality piece of kitchen equipment and it is only $50ish instead of $200++ which is what the Le Cruset model costs. The only thing about the Lodge is that the handle is only good up to like 400 degrees, so if you want to bake bread-in-a-dutch-oven, you have to buy a replacement. That will run you about $10.

Knowing Amanda, I can personally vouch for the falsity of this. Also, Amanda, The Good Emily and I have had numerous conversations regarding her puzzlement at how anybody can forget to eat, so you are not alone.

He complains about washing it because it's heavy, not because it's difficulty to wash. It actually cleans up really easily.

I often wish to make quiche but there's something about it that has always deterred me. Probably because I looked up the Cook's Illustrated recipe and the first step was to coddle eggs or make the pie crust three days in advance or something.

I love quiche, too. And I don't generally like eggs.

Cook's Illustrated Quiche Recipe

1. Already have made three days ago the pie crust according to our 17-step recipe.
2. Mollycoddle eggs.
3. Punch Christopher Kimble in the kidney.

recipe is actually typed out on my flickr page for my friend, if you want it

In one bowl, mix:
2 eggs
about 1/2 cup egg whites
about 1/2 cup milk

In another larger bowl mix:
a bunch of spinach (about 2 fistfuls)
about 3/4 cup grated cheese (I usually use low-fat cheddar or monty jack) -- **save a little for the top and for the bottom of the pan**
about 6 tbsp flour
1 tsp baking powder
some salt - not much
about 1/2 cup fat free cottage cheese (don't worry, you can't detect it in the final product -- it's just there to add moisture

MIX WELL with a fork, until everything is incorporated, but don't pulverize it or anything. the spinach leaves look pretty in the middle of the quiche when they come out whole. also do not use frozen spinach -- too much moisture.

heat oven to 350
spray a pie plate with some cooking spray

sprinkle some cheese at the bottom of the pie plate, then put the mixture in there, making sure to try to get the spinach as well covered as you can.

i like to put some cayenne pepper on top of that, but it's not necessary

then sprinkle some cheese on top and bake for 50-55 min or til toothpick in the middle comes out clean (usually 52 min or so)

Cool and then cut into wedges. Eat one for breakfast every day!

This recipe is from my head, so I cannot vouch for exact measurements...

My dad is a life-long state employee. When I was growing up, his job was to counsel vets with PTSD, so I'm sure he knew from unemployment. He currently works for the state of FL as a hospice counselor. Just typing that makes me shudder.

yeah. i am not looking forward to taking the reel to reel back there. the people seem nice (an elderly german couple) but it took him like two months and a chunk of change to fix it in the first place and now i'll probably have to haggle with them over whether i'll have to pay more money to get it refixed. ugh. i was frustrated about this yesterday but since my brain was exhausted from 5 hours sleep the night before it immediately became a huge depressing insurmountable problem. it was not pretty.

1. Tonight I tried to buy cat food at the Asian supermarket (I was picking up shirts and didn't want to walk to Jewel in the snow). They don't carry such a thing, but I discovered the following products:

- fresh pig uteruses
- sugar wafers, durian flavored

- vegetarian "tendon" called Wheat Tendon (I'm eating it right now, it's firm)

2. I love the snow! I was thinking how much I love winter yesterday morning while waiting for the train while it was 9 degrees w/ wild gusts; inside of my layers I was, for once, warm and cozy. Cozy is impossible during summer.

SO I went outside and walked three blocks to the red line, no biggie, only to find that the red line platform was packed like mad. And I thought, "This is God's punishment for bragging." But then? A train came and I didn't get on it, and then another came right away and I not only got on it, but actually got a set. And I thought, "This is God telling me that I am totally fucking awesome."

Glad it worked out in the end! Took me about 2 1/2 hours to get home last night, but after talking to friends that hit 4 and 5 hours to go less than 20 miles, I feel pretty fortunate actually. The key was to jump around through residential streets, they weren't as packed. Not as cleared either, but I'd rather trudge forward at about 8 mph than sit with my car, quite literally, in park like I did for 20 minutes on a completely immobile Waukegan Road.

Anyway. I hope Skilling's whinging about tomorrow night's storm being "four times the precipitation" of last night is just some overreaction shit.

out of curiosity, what are the gay bars i should hit up when i am in chicago for the AWP conference in february?

it's been nearly seven years since i stepped foot in the city, my memory is awful.

Do you have a specific area of the city in mind, or are you willing to travel? My personal favorite gay bar is probably Big Chicks on Sheridan and Argyle, which is off the Argyle Red Line stop. I like Crew, which is on Broadway at Lawrence. The Wild Pug just opened on the same block, although beware of rolling elf-sized boob grabbers if you go in there. If you like junkie strippers, I would highly recommend the Lucky Horseshoe.

I'm straight, though, so you probably shouldn't listen to me.

I've only been to Crew and Spin, but the latter is decent because it can cater to different moods depending on the room/night. The front has a pretty laid-back vibe, but the back room can get a little crazier - esp. on nights with the shower contest.

What kind of bar do you like? You could tumble up and down Halsted St. and try each one. Big Chicks is great, it's a neighborhood bar. I took a snow day today, btw, although I brought work home with me. I think you have to go into this endeavor with the understanding that you might need to seek professional help if it doesn't work out, and give yourself permission to do that if necessary. But you know, ultimately, it's just hair. And yours is short enough that if it doesn't work out, it will grow out fairly soon. I was always a lot more skittish about coloring my hair when it was long and I felt like I had more to lose. Although it was to the middle of my back during the bright blue hair year, but then again I was probably high.

In summary, dye it blond but get totally stinking stoned first.

Why don't you try something just a bit lighter first? Like Jenny's hair color?

well, i am sort of an all or nothing haircolor sort of person. i don't really see the point of dyeing my hair if it's just going to look slightly different. it better look REALLY different or it's not worth the trouble. (or, if getting it professionally done, the money). note: i have never paid to have my hair professionally dyed. i had it done free a bunch of times and then mostly did it myself.

i dunno. i have the "sunflower blonde" box at home waiting for me. i guess i'll wait til i know le@nne is back and then maybe do it, although she will kill me if it goes awry.

For some reason, Angela on Who's the Boss always reminded me of my stupid step mother and I therefore hate Who's the Boss, Judith Light, Tony Danza, the girl on the show and that stupid kid. And Mona. All of them. Fuck that show. Fuck it.

Jenny, I think we should go get lunch. I'm going to eat lasagna with garlic bread and some tiramisu for dessert, probably with an ice cream snack later in the afternoon. Oh, and a thing of smoke almonds. Does that sound good?

1. go on a winter adventure of walking to hot doug's for lunch - i will get exercise, get out of the house, and get veggie dogs

And I hear him at my desk. All. day. long.

i don't know, we got groceries yesterday so there should be plenty of options though
