ian thank you for your hamburger input

do you think you will ever try the new bacon & blue from wendy's

iiiijjjj, Saturday, 27 February 2010 04:10 (fifteen years ago)

if it sticks around and i am at a wendy's when it is available and if i can resist the allure of the bacon jr. cheeseburger for 99c, then yes.

(not sure where the closest wendy's even is.)

Only when I visit my parents in Alabama. Here in NJ, the closest thing I've found to a decent burger place is Five Guys, and while I appreciate being able to get an onion, garlic & A1 burger, the greasy, unseasoned meat doesn't really do it for me, and the inability to get less than a pound of fries is frustrating. (I do like that they leave the skins on and you can get vinegar on them, though. Those are marks of quality.)

When I visit home, I always end up going here. Jalapenos, onions, mushrooms, Tack Sauce (local sweet habanero sauce), so fucking good. Or sometimes Milo's- I don't know if other states have Milo's, but they really should.

husband makes a great slow-cooked burger - 80/20 ground beef, handful of diced red onion & a can of diced chilies, on sourdough bread (no condiments)...yummo. like a smoky meatloaf and SO goood.

sadly my quest for a healthier eating plan has led us to experiment with ground turkey tonight ;_;

VegemiteGrrrl, Saturday, 27 February 2010 04:51 (fifteen years ago)

yeah NJ is lackin in decent burger places (or maybe i just dont' know where to go?)

can't remember the last time I had a burger, tbh. when I go back home I usually make blue cheese burgers (blue cheese, worcestershire, &c mixed in with the beef) on the grill.

Ƹ̵̡Ӝ̵̨̄Ʒ (dyao), Saturday, 27 February 2010 04:53 (fifteen years ago)

I'm still trying to figure out how to cook ground buffalo without having it turn out dry and chewy. I've had AMAZING buffalo burgers but whenever I try they come out awful.

a black white asian pine ghost who is fake (Telephone thing), Saturday, 27 February 2010 05:13 (fifteen years ago)

Had a Wendy's bacon & blue last week -- it was okay I guess, but really their spicy chicken sandwich is better. Still, credit to them for being willing to offer strong flavors in a generic fastfood world.

Next time I want a blue cheese burger, I'll probably do it myself and put the blue cheese in the middle.

xpost, grind up some fatty bacon in a food processor and mix in with the buffalo?

I have burgers maybe every couple of months, but then I have little bouts of burger-eating. last time was last weekend, when I bought some minced beef and made my own, with chilli, onion. Served them griddled, medium-well, in pitta bread with coleslaw. Lishdelish.

Goulburn Years (King Boy Pato), Saturday, 27 February 2010 10:36 (fifteen years ago)

I saw a Cantal burger on a bistro menu last week, for 17 euros. I gather that's just a burger with Cantal cheese. I'm sure it's great but really, 17 euros for a burger? Granted, it was in Saint-Germain-des-Prés, explaining the price somewhat.

i probably have a burger once every... three months or so? less? like i said i have to find a time to do it when my girlfriend won't wonder about what or where i ate. if she knows i ate a burger i'll get one of those looks.

i eat about 4-6 hamburger a week.

i like fat burger. king burger.

i like vera, the vancouver chain. i get the straight vera burger with provolone and dijon. also like lamb burgers.

i like splitz grill. i get the run of the mill burger with aged cheddar.

i like wendy's.

i like burger king. triple stacker or bacon double cheeseburger.

i like mcdonald's. double quarter pounder with cheese, large diet coke.

I have eaten a lot of fast food burgers as well as a lot of fancy gourmet restaurant burgers in my time, but I haven't had many (if any) that compare to a nice slab of ground beef seasoned with a few drops of Worcestershire sauce, grilled to medium rare on a Weber grill, and served with fresh tomatoes, pickles, white onions, Heinz ketchup, and French's yellow mustard (notice nothing about cheese).

The only thing that comes close to that for me is a well-made "Western-style" with K.C. Masterpiece (original), Onion Rings, bacon, & a slice of medium cheddar.

notes on unconventional burgers:

a few nights ago, at guu w/ garlic i had miniature tonkatsu burgers: pork cutlet, shredded cabbage lightly pickled, mayo, all in miniature chinese mantou buns.

possibly 3-4 times a week, i eat rou jia mo 肉夹馍 at the richmond public market, which is called "chinese burger" on the menu, despite being closer to a pulled pork sandwich, perhaps: pork shoulder braised slowly with delicious stuff like star anise and cassia and dark soy sauce, stuffed in roasted flatbread (traditionally roasted in a clay oven or an oil drum, but here, in a boring old oven), possibly with cilantro or raw peppers but not always.

dylannn, Sunday, 28 February 2010 02:30 (fifteen years ago)

listen, arby's used to be a big treat for me, when i'd go from moose jaw to regina, to my orthodontist to get my braces adjusted. it was nice and soft, too, with my teeth all fresly pulled back. i can still eat literally a dozen beef and cheddars.

on mcdonald's vs. burger king. shit, i fuck with mcdonald's, i think. but you've usually got an a&w/bk/mcdonald's choice here, and i'll get a mozza burger at a&w nine times outta ten, if i'm in a serious burger mood. just in a gorging mood: probably burger king. cheap mood: mcdonalds.

sorry for not using your burger gifs.

guac on burgs is tight, in fact if you're in need a hamburger and you're in san diego but you're not really near an in and out the best thing to do is hit up a taco shop, often times they have the best burgers of all and all you really need on it is some guac. plus they're always like $1.50.

dylannn, Sunday, 28 February 2010 09:23 (fifteen years ago)

Best hamburger in London? MY PLACE. The key things are to fry off some onion rounds before you do anything else, for placement under the cheese as it melts; thin patty no more than 1/4 pound (no giant meatball shapes, and do not get all up in the meat with anything but basic seasoning), toasting your bun on the bread side so the burger doesn't disintegrate when you hold it (this is also the single thing that turns averageburger into soda-fountainburger). Garnishes: tomato, lettuce and pickle ONLY, onions are already under the cheese (which can be any sliceable cheese and may be the one acceptable place for Kraft singles, when necessary). Mayo for me is mandatory on top inside bun, ketchup goes between cheese and tomato/pickle in centre of burger, mustard goes on bottom bun, under the burger itself. Dijon or French's if you're feeling homesick or childish. See also: patty melt, Juicy Lucy.

This thread is giving me cravings that can't be satisfied immediately (or even this week - I just went to the grocery store on Friday and bought ingredients for many West Indian recipes). London has good burger chains but my own hamburgers are that much better.

there was a very short-lived 'canadian' restaurant in wimbledon a decade and change back called le prez, and it specialised in a 'canadian burger' that was perfectly spherical, about the size and shape of a baseball. it was hellz of hard-to-eat, and lord knows how they cooked it - i'm thinking now it must have been deep-fried.

Heaven really needed an overextended Hamburger Union, I guess. At one of these places I asked about the insistence on the 'medium' burger after my request for med rare was denied (WTF how very dare they) and the waiter said it was to do with health and safety, but I had the distinct impression of pre-cooking at central location.

Oh BTW, for hamburger patties it's also OK to finely dice raw onion and mix with the mince. You really can't have too many fried onions in this situation...

just sayin, Sunday, 28 February 2010 14:38 (fifteen years ago)

Now, this may sound like exaggeration, but I truly believe that Southern California is the burger Mecca of the world.

I guess you have to start with In-n-Out, which, thanks to rapid expansion in the past 10 years, you can find one in almost every incorporated town, and their quality has not suffered one bit. McDonald's was started in San Bernardino. Fatburger was also founded here.

Then you have your small chains and independent spots. Everyone has an opinion about the best burgers around. In the San Gabriel Valley, you have Wolfe Burgers, Pie-n-Burger, Tommy Boy's, The Hat. There's a local chain called the Habit which will blow your mind. And another local chain called The Stand which makes AMAZING chili burgers.

I have a burger maybe once every other week. It is as often a double qp with cheese from McDonalds, or a double-double animal style from In-n-Out, or a bacon-avocado-swiss from the Habit. Gotta keep that red meat intake in check, but damn...so many great, great options.

^gonna make a version of that at home tonight. LaBriola sell their pretzel buns, which makes an average burger into a great one. With that, Nueske bacon, and aged Hook's cheddar, sauteed onions, and ground bison seasoned with Worcester, you've got a burger that could theoretically be equaled but not bettered.

the Bollo pub in Chiswick does a pretty decent burger in the gastro-pub vein, but nowehere in the UK that I've found as yet does anything to match the majesty of the Burger Joint or Shake Shack burgers in NYC. I was reading an article the other day about the burger splitting to 2 definitive styles - the gastro (v thick, juicy, rare-ish) vs the burger bar (pressed, good charring on the outside). Definitely favour the latter, need the charring.

But what is the food like, D? Convention Grill gives amazing burgers, copious amounts of fries, and the best 'malts' (LOL MNspeak) available in MN. Convention Grill, the drug store soda fountain where I worked, and a proper drive-in are all very close to my house. This is the drive-in before it was revamped two years ago:

amazing! they had great burgers and fries and other sandwiches, and shakes too. the best was the fried donut - they'd take a glazed donut, cut it in half lengthwise, and fry both sides in butter. as you can see, it costs 70 cents.

carne asada, Tuesday, 2 March 2010 00:05 (fifteen years ago)

Gotta keep that red meat intake in check, but damn...so many great, great options.

umami burger is pretty unimpressive. the meat kinda sucked.

the york's burger is solid fare, nothing that blows my mind though. i prefer their pork sandwich.

the fix, which is a small burger joint in silver lake, has some really good burgers at very fair prices.

Eating cheeseburgers with fried eggs on them just seems like you're daring God.

richie aprile (rockapads), Tuesday, 2 March 2010 17:31 (fifteen years ago)

So, this may seem like an odd place to post this, but the vibe here (minus Ms. Gollum) is pretty positive and we're in a sharing thing, so . . .

I've recently had a really good turn in my life. Things are just more straight-forward than they've been in a long, long time, and I'm enjoying putting one in front of the other to keep it going like this. Sort of like hitting a nice flat area on a bike ride . . . you still gotta pedal, but once you got a good spin going, all you gotta do is keep spinning.

Anyway, I took advantage of this very positive time to prioritize things that I want to do. Like, big picture. One of them is to become a truly excellent cook. I've enjoyed cooking up until now, and have had a modicum of success with the things I have made repeatedly. I want to take it to the next level.

Ergo, this weekend is the weekend that I work out my own hamburger recipe. I am thinking somewhere in the 1/3 pound range, but possibly higher in order to stand up to the grill (charcoal, of course).

I will take plenty of pictures to photo document and post them here.

They offer a single-patty Baconator now I guess, but when I went into Wendy's the other day the girl asked "double?" when I ordered. I had a moment of confusion. Double Baconator? That would be four patties. I mean, wouldn't a single Baconator just be a Big Bacon Classic (or whatever they're calling it now) without lettuce, tomato, onion, and pickle? Or is there actually double bacon on a Baconator, whether single or double?

I miss Wendy's. I have been living in Wendy's Exclusion Zones for a couple of years.

Had a Big Mac a couple of hours ago. I swear there is some chemical in the Big Mac that is actually beneficial to health. When I'm rundown or whatever I swear it does me good. Maybe there's a ton of zinc or vitamin B12 or something in it, despite all the cholesterol. I have been eating a lot of pizza lately and I swear pizza is harder on my digestive system than Big Mac.

I generally side with the "break the meat down as little as possible when forming the patty" crowd so I don't mix stuff into it, but I'm not going to say my way is the only right way. (I'm just going to think it.) I will say that my burgers reheat better when they haven't had anything mixed into them.

i didn't have any dry elements to mix in, just went with egg, seasoning, and yeah it was kind of a mess and broke the meat down to a surprising degree. but it held together just fine to cook and immediately eat. since i haven't tried that before, i gather that something along with the egg would help bind it together better?
