generally imo if you have a bagel w/stuff on it, then you add flavored cream cheese its too much flavor, maybe on a plain bagel, tho i guess i like lox and like tomato or w/e just on there, but not so much in the cream cheese its a lil gross imo, and as far as being 'purist' or w/e you might as well just rep 4 plain bagel plain cream cheese in that case

Bagels around Sacramento definitely too lightly baked, also not as dense and chewy as I would prefer.

My weapon of choice, plain bagel, plain schmear. Sometimes a bit of Lox and cucumber but not often. Have a hard time with fish in the morning.

My first favourite bagel was the egg bagel from Byerly's in Minneapolis. I like plain and poppyseed - and salt as well, but in some ways this is like a round soft pretzel. Knocking half of the salt off is part of the charm of the salt bagel, and so is having it with unsalted butter. When I was growing up, there was a salt water bagel factory in my town, along with about five proper delicatessens and ALL of these are now closed. Jalapeno bagels are WRONG and as a notional Gentile even I'm saying they're inappropriately goyische. PUT THE JALAPENOS IN THE CREAM CHEESE IF YOU MUST. Suggesting that cinnamon and raisins are somehow unacceptable ingredients in bagels, also wrong - if they're good enough for noodle pudding, they're good enough to go in bagels.

My definition of 'goyim bagel' is any bagel made into a 'sandwich' with non-kosher ingredient combos, eg. ham and cheese.

I fucking love everything bagels. Garlic is a v close second. Recently, I fell in love w/ sesame bagels when I went to the coffee shop and that was all they had left, and I realized it tasted just like sesame pancakes from Vanessa's Dumpling House xcept I didn't have to go to Chinatown NYC to get them.

well there are various techniques but today i will hold forth on the 'quickel method' whereby you cook the to be pickled item in brine and they are ready to eat immediately

first make yr brine - you can mess w/the proportions/ingredients but a basic one could look like 4 parts water, 4 parts vinegar, 1 part salt, 1 part sugar - you can also throw in any sort of herb or spice youd like to flavor the situation with at this point, really could be anything, whatever you add the pickles will taste like that, im a fan of thyme personally

bring the brine to a boil and throw in yr sliced up onions (or whatever, i enjoy pickling radishes w/this method v much) - cook them until they reach yr desired constancy - really depends on how thick you sliced them etc but maybe 3 minutes or so

strain out the onions and shock them w/cold water to stop the cooking - save the brine

you can eat the onions now - and theyre even better after being stored overnight in the fridge w/the cooled brine - they keep a long time as theyre lol pickles - great to have around!

breaking news: Posh Bagel actually met, possibly exceeded expectations! None of the terrifying scariness the name suggested. Straight up bagel bakery, some premade sandwich options but you can pick whatever you want with whatever you want on top. Nice chewy bagel with a little bit of a crust on it, cream cheese, lox and cucumber...pretty freaking delicious.
It met all the requirements of my craving.

those are House of Bagels (geary is where their store is) and those are totally decent. the best one i've had in sf proper is from Marla's bakery. they have a storefront bakery in the mission somewhere east of folsom around 22nd (iirc)and a restaurant on balboa. and in the easy bay, beauty's bagels are a killer Montreal style

burma superstar is really good! after years of assuming it was just another over-rated place for white ppl, i actually ate there, (the one in Oakland). I've also had cheaper burmese food in East Oakland that was just as good, but that doesn't make burma superstar less good. Just higher overhead.

there are definitely some white ppl "fusion" items on the menu, but they mark the authentic cuisine so you can seek those out if you want them. we ordered a bunch of the authentic items and it was pretty comparable to what we'd had in that part of the world

i was a little surprised that they gave everyone chopsticks tho because generally burmese people don't use chopsticks, except maybe for noodle dishes

I put my unfinished beer down on a table to go onstage and soundcheck, when I get offstage a couple minutes later my beer has been "bussed" - "oh that was the last of your drink tickets? another beer will be $8" We were also told that no one who was not in the band (ie our friends, significant others) was allowed in the "green room" area.

They just treat the performers like shit.
