lex -- what about baked potatoes?
preheat oven to 400 degrees, prick the skins of the potatoes with a fork a couple of times, and bake them for 1 hour
you can sit them right on the oven rack, no need for trays
once the skin is crispy, take them out and eat.
then just buy whatever fillings you think would be yummy and delicious and put them all on the table and make a feast out of them
bacon, cheese, sour cream, chutney, chili, whatever tickles your fancy.
that way you only have to cook the actual potato.

on one of our first dates B and i had a picnic and he made some DUMPLINGS! from scratch, but a few of them weren't totally cooked through and were sort of soggy and droopy as a result. now, in a restaurant/fine dining context i'd have been put off but in a "oh, someone who really likes me a whole bunch made these for me" context i happily ate almost all of them. so even if whatever you make is not worthy of escoffier (or even sbarro), i guarantee yr guy will eat it and sincerely enjoy it bcz the important part will be that you did this nice cool thing for him

food-wise, i will vouch for getting salmon steaks, rub with olive oil and s+p (maybe some dill if yr feeling fancy), bake in oven (on foil) at 425 for about 12-15 minutes or so. maybe roast some asparagus along with it after you toss 'em in OO and s+p too

you guys, i cooked a three-course meal for the bf last night (oeufs en cocotte, gazpacho blanco, harissa chicken). IT ACTUALLY TURNED OUT REALLY WELL. i had like six total meltdowns but five of them took place before i actually got into the kitchen. i haven't been converted to cooking because i still hated the process and got really stressed out (apart from blanching almonds which was just boring) but i also feel really proud - currently my mental state is 50% PTSD, 50% smugness.

Me and bf thought about getting married, we tried to get it together before his mom died but we couldn't swing it. Lots of reasons to get skeptical about people's motivations for tying the knot but ultimately anyhomo who voices their own reasons/baggage for avoiding gay marriage wrt other people's gay marriages should maybe reconsider

:( wrt my bf's mom dying, it was pretty sad, we'd been "engaged" for so long but had been too busy to set a date, and then by the time it became clear that we had to get cracking on making wedding plans if we were gonna do it while she was still alive, the whole act felt selfish and strange, like, "racing to beat the cancer clock so I can make your son an honest woman" or whatever, diverting the attention to ourselves instead of upon her, so we left it and threw parties for her instead :)
