I am working hard on eating onions in cooked things but on burgers is too noize for me.

Dunno about chives but you can put garlic & scallions/onions IN the ground beef when you make patties, that might work out NOMMY.

the leeks will take longer to cook than onions, and they will dry out a little bit because of the lower sugar/water content, unless they are cooked separately and ahead of time,

but

you can make an excellent burger by grilling the beef in a raft woven from the green fibrous leek tops, to infuse the leek flavor

they are more fragile than many other greens, so be careful they do not get wilty like chard or mustard or they will taste like gravel.

i recommend steaming them alone and then tossing them with the bacon/oil.

fatburger was hecka good when i was in college in westwood. dunno if that was due to the fact that it was actually better or a 10yr younger version of me liked worse foods. the only fatburger in northern california is deep in the east bay and owned by E-40. we decided to make a night of it. drove an hour to get there only to realize it was ridiculously disgusting. so sad.

Blue 9 is the place California transplants refer to as "NYC's In-N-Out" which I guess is true if you understand that it's 3x expensive and 1/3 as good.
