Nachos, to me, are food for watching sports live at the venue, whereas wings are the sort of thing you tear through while watching at home. Both of them are so perfect within those specific contexts that I cannot reasonably compare the two.

what KIND of nachos are we talking about? i find that it is much, much easier for a random sports bar (or even vaguely reputable place) to completely f up nachos than it is for them to completely f up wings is the thing here. i voted wings on this basis -- they're a more strict discipline, whereas when you say nachos you could mean some awesome from-a-mexican-joint-made-by-authentic-ideas kind of guac and beans and stewed meats (if you're into it) and jalepenos explosion OR you could mean this

Nachos is all about what you put into it.

Good wings are still going to be fried/baked chicken with some sauce. You can put tricked out chicken on nachos.

Henceforth natchos > wings.

honestly nachos are good when done right but seriously they're not even as good as having tortilla chips with fresh salsa or guac? they get fucking soggy and gross. there is some really good, solid discussion in this thread. good job as always ILNFL.

the answer, for the reasons pointed out above, is wings. maybe really really transcendent nachos could top wings, but avg. nachos vs. avg. wings = avg. wings every single time.

another thing is that if it is just you or if you are with your weird friend who doesn't like bar food you can get an order of wings for yourself and not feel like a complete glutton, whereas i could never in good conscience order nachos when i'm going solo.

Maybe it is the impassioned defenses here, but you know what, I am getting off the fence and voting for wings. The Schef is right, really. I have had subpar nachos many times, and had some complete nacho failures amongst the many nachos I have eaten, but I do not recall having an experience with wings that really went south on me. Even if unspectacular, the wings remain solid.

I am sorry, J0hn. If all nachos struck with the same pleasure as those served at high school sporting events and Raging Waters water slide fun park, I would be right there with you.

they have great ones at Walter's in Claremont where I grew up - thick corn chips, cheese, beans, sour cream, guac, salsa, this crazy green Afghan chutney...but the "vast canvas" aspect of nachos discussed on this thread is also a huge thing. I make lentil nachos here that while they open me up to Neil From The Young Ones comparisons are greatly beloved by my wife & would probably elicit a "damn, better than it sounds by a long distance" from lentil-haters

I would assume a sufficiently large outdoor cookout could produce excellent nachos and excellent wings. Like, I think if I went to the LA County Fair and could not find both, I would be shocked, and disappointed. I do not know of other county's fairs, though.

The way I likes my nachos: thick carpet o' chips with minimum overlap on a baking sheet covered in aluminum foil. Individual dollops of refried beans on each chip like a sweet texmex kiss. Splash liberally with salsa and give a light cologne of hot sauce. Blanket with pepperjack and cheddar. Into the oven. Alton Brown was doing wings the other night but I wasn't paying any attention, so I just looked up his recipe on the web. No frying -- steam the wings for 10 minutes, then roast them for 40 minutes (!) at 425˚ (!!).

I can see the steaming, but that sounds like way too long to roast at that temp.

the thing about wings is that if you are in a bar by yourself, or just two ppl, it is easier to get a managable quantity than it is to get a smaller sized plate of nachos. wings are often sold by the wing, or in counts of maybe 4.

If I had to make nachos using only a microwave, it would have to be in stages. Microwave the cheese first, and set it aside for a minute. Then microwave the chips and beans (or maybe just the beans). Dress the chips with whatever you're putting on there like salsa, guac, chilies, meat, whatever. Then dress that with the cheese.

There used to be a place in or near Long Beach we went to all the time in the early 70s, Juan's Little Tijuana, that had a "house specialty" appetizer with falling-apart stewed chunks of beef and/or pork that is what I shoot for every time I make nachos. I don't think "nachos" was even a common term back then...we just ordered one or two House Specials and then thought about entrees later if at all.

There are four different legends about how the Buffalo wings came to be.[3][4]

One story is that Buffalo wings were first prepared at the Anchor Bar, located at 1047 Main Street (between North Street and Best Street) in Buffalo, New York, USA on October 3, 1964, by Teressa Belissimo, co-owner of the Anchor Bar with her husband Frank. Upon the unannounced, late-night arrival of their son, Dominic (and several of his friends from college), Teressa needed a fast and easy snack to present to her hungry guests. I have had microwaved nachos and, to my surprise, the chips were not as soggy as I was expecting. But before the suggest bans start flying like a perfectly thrown Bernie Kosar forward pass I prefer under them under a broiler where the chips become stronger and more reliable. Alton Brown was doing wings the other night but I wasn't paying any attention, so I just looked up his recipe on the web. No frying -- steam the wings for 10 minutes, then roast them for 40 minutes (!) at 425˚ (!!).

I can see the steaming, but that sounds like way too long to roast at that temp.

This recipe works really well. Crispy skin, meat falling off the bone, and you don't end up with a pot of hot oil to deal with afterward. Will be making a massive batch with that method tomorrow.

Wings Fo' Evah. Seriously. I had a huge lunch, and prolly won't eat anything terribly large for dinner, but if someone were to show up with 24 hot wings and some blue cheese dressing, I could CRUSH it without pausing for a breath.

This morning I acheived ultimate wing triumph by procuring chicken wings from that farmer that Michael Pollan had 58 orgasms over and BEST OF ALL aside from them being 500% certified Alice Water's approved yuppie foodie wings I was free to get ONLY THE FLATTIES which are the best parts IMO.
