This is explained in detail on one of the TV Without Pity forums. Basically, each team has two support staff who work sound, cameras, and have the all-important Amazing Credit Cards to purchase airline tickets with. Each team of "two" is actually four.

(also, a lot of times they just show people taking their seats on the plane... so the camera crew wouldn't neccessarily have to be there for the whole flight as long as another crew was waiting at their arrival point)

The other teams may have wanted to yield C&C but they're all too chicken to actually do it -- Chip & Kim were probably the only ones willing to step up and yield those Texas morons.
