Do the Lannisters have literally no control over the populace of Kings Landing now? I'm still confused as to how all that stuff managed to happen without the king's guard rushing in and doing something about it, especially when during Joffrey's reign, no one would have stepped out of line at all.

There was a scene in S2 maybe when Joffrey and Sansa got stuck in the middle of King's Landing and the population went mental at them, the Hound and Tyrion had to bundle Sansa out of there. So I think they've always been basically hated by the proles.
Also Cersei built the religious fanatics up in the first place order to compensate for a general lack of allies/muscle elsewhere, so maybe the King's Guard isn't what it used to be.
But they've got a resurrected killing machine now so she should be able to regain that iron fist pretty easily.

I think she needs the ritual to make her murders OK -- we saw a similar thing when she killed Polliver(?) by repeating what he said about Lommy -- so that it was as much for her own sake as it was to agonize Trant.

There is an established system of science (Maesters/Old Town), it just happens to be at odds with most notions of magic. I presume it will be quite a significant theme in Sam's story going forward.

Medieval scholasticism is definitely the model he uses but the role of maesters is supposed to be far more practical than that would suggest.
