I'd hazard a guess that the chips-in-a-glass approach was designed by the restaurateur to avoid having to use a larger plate to accommodate the amount of food being served with that order, especially when much of the plate is being hogged by that square dish of sauce and the pickle spear. Possibly the next size larger plate was too big. You are supposed to react with 'how clever and artistic' rather than 'wtf is going on with these French fries in a glass'.

I always immediately dump the fries out so it's not that big of a deal, but it still seems weird. Maybe I am having sympathy for the servers, since in my days as a waitress, I would have spilled SO MANY GLASSES OF FRIES trying to get those dumb plates to my tables (I was a terrible waitress).

Regardless, those fries are amazing. And that little dish of goo is malt vinegar aoli, and the pickles are made in-house and are the best pickles I've ever had, and the burger is so good and you do not need to put an egg on it it is perfect just as a burger.

I would divide the dish up into mushed-up spherical bites hanging from the ceiling by silk threads then give each customer a map to follow to get each bite of their chosen dish. Gravy/custard etc could be dripped down the appropriate threads

The reason for this being on a plate is that that dish was just under the BROILER to melt the top, and it should be sizzling hot. The plate is so your server doesn't lose a hand.

not the case at all, you can get a 12-pack of 16oz ball mason jars (with lids too!) for like $8 at the hardware store and they are sturdy as fuck and they are multipurpose if you make jam, pickles, ferments, or use them as food storage. regular drinking glasses are like $1-$10 per glass depending on what you're buying, and ime are much more fragile regardless of whether you are buying cheap or fancy glasses

that said i do see single mason jars for sale at boutique food and cooking shops, there is definitely a "artisan rustic chic" thing going on that people will shell out $5 for a single mason jar, but if they look down the street at the hardware store they could buy them for very cheap

Restaurant in question is a fun joint full of board games, lined with stuff from Dr Who, Minecraft, D&D etc popular with kids of all ages. The menu features lots of pop culture gimmicks.

So this is a bit like saying "I went to a restaurant in the USA and couldn't believe the waiter was dressed as Pinocchio" without mentioning that the restaurant was at Disneyland.
