Does Henry Ian Cusick qualify? I'm not sure how well-known he was before LOST, but he was brought in to take the story a new direction and then he was also around for the first season of Scandal.

Old school TV, not a star, not sure if they were running at the exact same time, but actor Richard Masur had recurring roles as the boyfriend of both Ann Romano on One Day At A Time and Brenda Morgenstern on Rhoda.

Ralph Waite guested as both the father of Agent Gibbs on NCIS, and as the grandfather of Agent Booth on Bones. I don't know if this was simultaneous, but I was watching both shows around the same time.
Very disconcerting to see him on one show, then flip to the other one and say "Wait a minute, isn't that Gibbs's dad? Does that mean Gibbs is Booth's dad?"
