I've done this drive a decent number of times but don't really have recommendations. Not surprisingly, if you want a hotel on the water it's $$$.
I love the area north of Santa Barbara (basically from SB to Los Olivos), hugely underrated.
Big Sur is kind of a pain to actually drive because it's so busy. My advice (if you're not actually staying in Big Sur) is to stop often. Go for a hike if you can. The drive is gorgeous but not the best part.
Here are some Big Sur things that were recommended to me:
- camp at kirk creek if you can get a spot - sykes hot springs - get a permit and camp up the mountain off naciemento rd - ventana campground

oh, south of San Francisco you might want to stop in Pescadero, cute little town, good place to get coffee.
near there, if the weather's good, consider detouring a bit to Alice's Restaurant (no, not that one) in Woodside, eat under the redwoods.
Ben Lomond worth a visit as well (closer to Santa Cruz ... if you've spent the entire time to this point on the coast, consider taking the 9 out of Santa Cruz through Ben Lomond, to the 35, which will take you to Alice's)

Morro Bay is quite a bit cheaper than most of the coastal stops down that way, and you're guaranteed to see otters

Def book your reservations for lunch ahead in big sur during these times, lots of places closed or weird hours and the open places like Nepenthe have crazy wait times for walk-ins

The side cafe at Nepenthe means you get the views and less of a crunch, so consider that as well.

also, the views are obv spectacular but driving can get pretty stressful with the winding narrow cliff roads etc. -pace yourself!
