although every one's a winner for me, because I love rice and am always happy to be having it, yet the task remains to determine which staple rice dish from world cuisine will take the laurel on ILE?

hard to beat paella. Sprigs of rosemary added and covered for a few minutes at the end. Served with garlic aioli. Recently had congee for the first time, which was fantastic. However, I tend to enjoy the feel of seperate grains in a rice dish.

I make very simple biryanis that don't really adhere to any recipe. Just a curry paste of fried onions and tomatoes with whatever meat and veg I have and some coconut milk - then wang some rice in there. I never call them biriyanis because they would be a grave insult to the master biryani makers of India.

I love the simplicity of pilau - can't remember having pilap. Will have to try that one.

Anyone who has a instapot pressure cooker remember this:

2 cups brown rice
2 1/2 cups water

Pressure cook for 22 minutes and then let vent for another 10min when it's done. Brown rice tastes really good when pressure cooked and this recipe comes out great every time.

ca. 2005 (?) a Japanese biz partner wants to introduce me to a colleague of his intrigued by this foreigner (me) with extensive experience eating obscure regional cuisines from Japan. So after our meetings we are introduced/exchange gifts/cards we take the Den-en-toshi line to the midburbs of SW Tokyo and arrive at this tiny place specializing in tamago-gohan: a cracked raw egg over freshly steamed rice. That's it. Sure the menu went into the lineage of the chickens from Nagoya and also the rice from Niigata, but here we were on expense ordering this 2 ingredient dish that was 700yen (~$7USD) which despite (or rather because of) it's simplicity was rather remarkable and probably one of my top 50 meals in Japan.

Highly recommended.

Black rice is great. I've made the fancy Brock Hoppin John but with Jasmine rice. I suspect Carolina Gold rice is probably great if it's around, but I can't see it being worth the shipping cost otherwise. The cooking method is a bit outrageous.

the cheapo basic rice cookers mostly have shitty metal teflon coated pots. I went through a couple before outlawing teflon from my kitchen. I was browsing some of the better rice cookers but couldn't justify the cost at the time when I have pots with lids that do the same job. Still might go back in for one of the fancier ones at some point.
