made a ragu yesterday, used some quality tinned tomatoes/fresh sugardrop tomatoes (mutti brand baby plum toms) finished it off with some fried green chillies, bell peppers, garlic. Nothing complex but I got the taste balance perfect and couldn't stop tasting it while boiling the pasta.
