Another thing I make every week is I chop up a bunch of mini cucumbers and mix them up in a bowl with a jar or pitted Kalamata olives. Been on that one for like a year now.

re tracer's OP, I used to do apple slices with peanut butter and a lot more peanuts mixed in. I didn't realize how calorie-dense peanuts were back then, but I thought I was being very healthy! I will still do apples and peanut butter on their own sometimes though.

Re: peanuts/peanut butter... calorie-dense does not necessarily mean unhealthy. When I travel I often pick up a jar of peanut butter and a bunch of bananas for snacking on -- an easy way to get some needed energy.

My main homemade snack involves peanuts as well, in the form of roasting my own. Pulverize kosher salt closer to the texture of powdered sugar, mix it with melted butter, toss raw peanuts, roast at 300˚F to a much darker color than I can get commercially, just under 1 hour roast time.

I like pairing peanut butter with savory things, it's only because of the pb&j convention that we think it should go with sweet. PB on sourdough with Sriracha & salt.

Not 100% necessary, but more of it melts that way and the nuts keep their salty flavor even if dried salt can be shaken off of them after roasted.

i will confess to being one of those people who adds a scoop of peanut better when i am making my fake "pad thai" -- although i will redeem myself by saying i actually do make a decent quasi-authentic pad thai, and i only add peanut butter when i'm just making fridge roughage remains thai-style noodle concoction: usually leftover spaghetti with sauteed veggies, egg, lime, cilantro, and peanut butter/soy/fish sauce/whatever hot sauce.

My own pad thai sauce is adapted from Bhumichitr: half fresh squeezed lemons, half Pearl River Bridge light soy sauce, then chili powder and sugar to taste (generally, lots of both). I mix it in a pint glass and balance the flavours til it tastes believable
My favourite home snack is sticks of jicama and carrot with nothing else
