I am definitely wondering how much having a celebrity name on a wine bottle boosts sales, I have definitely bought a Coppola wine before mostly because of the name and I've considered the Snoop Dogg one. I, like most people probably, know next to nothing about wine and don't make informed choices when buying, that name recognition probably helps in picking one random bottle rather than another.

My suspicion is that it's a modestly respectable side hustle. If you are a rich and famous person you may have spare time, but in unpredictable amounts. Having a winery is a way to play at something that looks like honest work with your hands - you can be seen walking between rows of grapevines gently caressing fruit, wearing sone boots and coveralls. But it's also associated with discernment and connoisseurship. There you are tasting the new can franc and thoughtfully nodding. But when you don't feel like it, a professional staff does all the work for you. Win-win.
