The reaction varies between people (I usually don't have a problem with it) but dairy does encourage mucus production, which can impede/fuck up your ability to sing.

In practical terms, it doesn't really matter. If your throat feels thick and you are constantly clearing your throat, you're putting unnecessary stress on your vocal chords that are going to negatively impact your vocal stamina just as much as attempting to sing through light mucus buildup.

Even if the reaction is psychosomatic, if you have it you're better off avoiding dairy before singing.

Well, that's all fine and dandy if you're actually ALLOWED to drop down an octave; usually, if you're singing with a group, you've got a part that you have to stick to regardless of your vocal health.

Gonna caveat all of this by saying that dairy doesn't really bother me so I think some people overstate its effect; this is where the psychosomatic component comes in.

A voice teacher told me to avoid dairy, too much is bad for your immune system, especially in cold and flu season. Another thing is that heavy dairy products can make you feel tired which I have found through personal experience is really bad for your voice. The more perky fresh you feel, the better your singing. Which is why I don't sing anymore. That teacher recommended all sorts of things to me, esp. lots of tea and stretches and sit-ups.
