I think it means bringing it *almost* to simmering point on the stove. So not boiling it, but close to that point then taking off heat.

I could be hideously wrong though ... google martha stewart or something ;)

52, and I had lobster for essentially the first time in my life tonight. (I tried a little bit in my teens at my grandmother's during the holidays once, along with a lot of other seafood, and got violently ill--tonight was an actual lobster dinner.) I don't really get the appeal. It tasted fine, but it was a lot of work to get not a whole lot of lobster.
