I love making taco salads.... chips...frijoles.. shredded beef... guacamole... mild to medium salsa... a squirt of to of lemon and/or lime... washed down with a cold beer or 5.... what could be better?

Keep me away from these things! I occasionally give them up, but then somehow I end up convincing myself it will be okay ("I'll only eat 2/3 of the bag at one sitting this time. . . I don't feel like cooking a real meal. . ."), but I almost always regret eating them, mostly because I can't eat them in moderation, at least not if I buy a whole bag for myself.

I just woke up from a nap and had a little leftover potato salad. (I have been making the most amazing potato salad the past couple days: simple and delicious, with an olive oil and lemon juice dressing.) It wasn't much, so then I tore into the tortilla chips. It wasn't supposed to be like this.

OD'd on tortilla chips last nite w/ some excellent guacamole at an overpriced but real good Mexican restaurant. Why is it these things taste better the greasier they get? I'm no fried food fanatic but heart-healthy tortilla chips are useless...you need that lard!

okay... it's untraditional, but when I worked as a sous chef / baker (err, from the ages of 13 - 22) I was often asked to come up with 'creative' and inexpensive side dishes. Here's a curried sweet potato salad that's of my own creation:

cut into 3/4 in. cubes and boil two medium sweet potatoes (orange) and two medium yams (white) until just done. submerge them in ice water to stop their cooking. seperately cook a large yukon gold (cubed, peeled) and dozenish baby red potatoes (unpeeled, whole), submerge like sweets to stop cooking.

combine 1/2 c. plain yogurt (I actually use the fake, tofu, kind)
1/2. c. mayonnaise (make it yourself, it's hella easy), about a tablespoon of high-quality curry powder, 1/2t. salt, 1/2t white pepper, and one large coarsely chopped vidalia / sweet onion. when the potatoes have cooled to room temperature, toss them with the dressing and refrigerate for at least 2 hours. Adjust curry powder dep. on strength and preference.

Alternately you can just brine new potatoes (cut into discs a la scalloping and boil in water, white wine vinegar and salt) until they're slightly undercooked. After cooking, refrigerate and allow them to soak in the brine for 12 hours. Drain potatoes, rinse once, and serve dry, sprinkled with thickly grated romano cheese and scallions.

teeny, I was just improvising with the potatoes. I steamed some baby potatoes, and I dressed them with olive oil and lemon juice (using about twice as much olive oil as lemon juice). I mixed in some chopped fresh oregano and part of a chopped shallot. Salt and pepper. The next night I added cilantro in addition to the oregano, and I added diced baby seedless cucumber.

(Sorry for the excessively twee ingredients, but I was just picking up what looked good and interesting at the store.)

An olive oil and lemon juice mixture is great on potatoes, but there are few vegetbales that don't respond well to that treatment.

I want to make some variation of this with salt-cured (not vinegar packed) capers though.

(I have a winter thing I make sometimes: potatoes (boiled and peeled), cooked kasha, mixed together with sauteed onions and salt cure capers and sometimes shiitakhe mushrooms, with some white wine. Something like that. It can be really good.)

num! There are two (and as far as I know only two) foods I will be forever able to enjoy because of childhood associations. I must have been about six at the time:

Capers (my uncle told me they were fish 'nads) and string beans (my cousin, the aforementione uncle's son, told me that it was the jolly green giant's dick). Sad thing is, I really like the taste of both vegetables.
