Dear Chris and Tom,

I have enjoyed my tenure at for $COMPANYNAME. However, opportunities of an extraordinary nature have presented themselves in recent weeks. Unfortunately, undertaking these pursuits will not allow me to continue working at $COMPANYNAME. I have spent considerable time weighing my options, and after much thought, I feel I cannot, in good conscience, allow the aforementioned opportunities to pass me by.

I would be happy to remain through Friday, April 28th to aid in the transition. If you wish for me to end work at an earlier date, that is perfectly acceptable, albeit somewhat regrettable. I would gladly discuss this issue with you and hopefully we can reach a mutually beneficially arrangement.

The 'aforementioned' seems a bit much when it was in the same paragraph - I'd use 'these'.

I have enjoyed my tenure at for $COMPANYNAME. However, opportunities of an extraordinary nature have presented themselves in recent weeks. Unfortunately, undertaking these pursuits will not allow me to continue working at $COMPANYNAME. I have spent considerable time weighing my options, and after much thought, I feel I cannot in good conscience allow these opportunities to pass me by and it is with regret that I must inform that I wish to end my employment.

To aid in the transition process, I would be happy to remain through Thursday, April 24th, although my schedule is flexible through the first week of May. I would also be amenable to leaving earlier if that is what you decide is best. I am very appreciative of the opportunity to work at $COMPANYNAMESHORT and I look forward to discussing how best to accommodate the transition.

I am happy to discuss all aspects of this decision and the transition process with you at any time.

If you don't actually want to leave earlier then I'd change 'amenable to leaving' to 'prepared to leave'. It just makes it sound less like you're keen on the idea.
