Yeah, I never understood the point of garlic powder, it's not as if garlic goes off really quickly, costs much, is hard to come by or tastes as bad as that shite.

Is a pick one spice only thread, or what spices do you have in your rack? If I had to OPO it would be Cumin.

My "spice rack," if you include ... what's the word I want, here ... condiments, but not things like banana ketchup or German mustard, just stuff like soy sauce ... you know, things you couldn't just make with other things.

Anyway. If you include that stuff, it takes up two multi-shelf cabinets. But what I found while moving, and having to live in the old apt. after the movers had already taken my stuff, is that the one I will fall back on if I can only keep a few handy is Tabasco Chipotle.

The point of garlic powder -- it doesn't taste the same as garlic. In Cajun and Creole cooking, it's used in addition to fresh garlic, not instead of (as is onion powder).

Have you had Cajun food? (For one thing: onion powder and garlic powder can be used as blackening spices and for other searing purposes: fresh onion and garlic most definitely cannot.)

I'm not saying I use either all that much; just that the point of them doesn't need to be to replace onion or garlic.

turmeric is quite under-rated. you can make yellow rice with it and some coconut cream, which is delish. unfortunately, turmeric stains are rather garish.

Discovered a wonderful tofu recipe the other night: chop a pound of tofu up into 3/4-in. chunks, saute in very hot oil until light brown, add a teaspoon each of garlic powder and ginger powder, stir a minute, add two tablespoons of tamari and turn the heat down to low, stir two minutes, sprinkle a tablespoon of nutritional yeast on top, stir to mix, serve. Apparently one can only use garlic powder and ginger powder--the real things don't work here.
