Hard boiled eggs that is.I can't seem to get it right. They are always undercooked!

I can't believe this -- How To Boil An Egg. That's easy: you watch the clock. Bring a pot of water to the boil, add salt. Lower eggs into water using spoon you have dipped in the water to make hot. Three minutes -- soft-boiled egg. Five minutes -- almost hard-boiled. These eggs are done when blowing on a wet shell dries the shell's surface. Do this when you take it out with the spoon. If you want the kind for egg mayonnaise/Easter eggs, take the pan off the heat after it boils for five minutes, then leave to cool for 10.

I find eight minutes makes the perfect egg for pickling. Just the vaguest degree of moistness left to allow the vinegar to seap in and make the centre gooey.

I am a victim of male hubris. My wife who isn't much of a cook was boiling some eggs then went for a bath, half an hour later bit's of egg are exploding around the kitchen. On telling me this I proceed to wind her up about her cooking abilities.
Later that week I'm bouling some eggs for my baitbox, go up and have a *quick* look at ILE, half an hour late sulphurous eggs strafe the kitchen. Needless to say my wife took great pleasure in reminding me of my inability to boil an egg.

Rule one of cooking even if you are a woman is MULTI-TASKING = DISASTER.
Rule two of cooking even if you are a man is NON-DISTRACTION = RECIPE FOR SUCCESS (even for béarnaise sauce).

Not that I've ever tried bs. Did try mayonnaise, once, Nigella's recipe. Glue. Glue with highly salmonella/coronary potential.

It's all very well specifying n minutes, but do you put the egg in the water when it's already boiling? Or put it in cold water and time from when it starts to boil?

I put it in cold water and time from the moment I light the gas. 12 minutes. Dunk straight in cold water to prevent greyness round the edge of the yoke. Hey presto.

Think yourself lucky you have gas. my bludy electric/ceramic job is PISH for doing dippy eggs. i don't like putting them in boiling water due to fear of crackage, though will try moomiecabbage's vinegar trick.

depends how stiff yer bread is.

also i read that eggs should always be cooked from room temperature - i.e. take them out of fridge in advance, but i always forget. eggs are definitely the best thing for cooking when on your own - boiled, poached, scrambled, omelette...

'soldiers' are strips of buttered bread/toast which you dip into the yolk. makes soft-boiled eggs one of the most exciting meals when one is a wee tot.

My Mum has an interesting gadget for pricking through the shell and into the air bubble at the big end of the egg. When you boil the egg, the air bubble does not expand with the heat and the shell does not crack. It's science, see?

I had soft-boiled eggs for breakfast this morning, as promised. I swear it's been many years since I've had them last, in fact I have no recent memories of them. Kind of chopped them up on buttered toast, with salt and pepper. Quite nice, and it made me feel like a kid again.

no sean i have not: nor are they anywhere mentioned in any of my chinese cookery books, or the oxford companion to food — yet surely thet are a thing for i saw them on blue peter when a tot (i seem to recall they are "merely" three years old, buried in earth: the skin goes all leathery... )
