in particular, what colour they should be

surely they should be white? they've always been white. but recently my local chinese takeaway has been providing ones that vary in colour from white to pink to orange. are they pumping them full of artificial colours and e-numbers, or are they more "orfentic" this way?

I have a feeling that's all colourings - the actual flesh of the prawn is white, isn't it?

One good development that has happened in my area recently is that the local chippy is giving away free bags of prawn crackers if you spend over a certain amount.

It is a unusual mix, yes, but I think you're meant to use the crackers as a kind of starter or something. That's what I do, anyway.
