Um, isn't it usually played while the filming is being done? Sure they add a cleaner etc. track in the editing procedure, but, you know, they're not dancing to silence, probably.

uh, even background chatter is not real. I was in a movie once (co-starring Andy Garcia, no less) and we (the extras) were told to act like we were talking but not to make any sound.
I mean, that's only if they're shooting dialogue though. I would think that at some point music would be played for a dancing scene, even if it's not the song that will be in the movie.
