Easy things to do with coconut milk..(must be vegetarian)

HELP!

(I'm making peanut sauce with it, which is the reason i bought it, but yet again, i fear i'm going to let the rest of the can go to waste, unless i can find something else to do with coconut milk that's easy and quick to make. Any curry powders out there that would fit a "Curry powder + Coconut Milk + Tofu + heat = goodness" variety? Dessert ideas welcome too)

Those curry pastes in a jar, like sharwoods and pataks (do they have those in the US?) are great with coconut milk. Just make them with some veggies and/or tofu. Fried onions, then add the curry paste, the veg/tofu, fry some more, then fill in with coconut milk... YUM!

Soup! Saute any of the following, in order from longest cooking time to least, roughly: carrot, chile, onion, bok choy, lemon grass, ginger, garlic. Add can of coconut milk, a few cups of water, fish sauce if you have it and soy sauce if you don't. Simmer for twenty minutes or so (optionally, add broken rice in the last three or four minutes, if you have and like broken rice). Top with chopped scallions, cilantro, chiles, peanuts, as you like.

(You could put tofu in there somewhere, and it would probably be better with it; I don't know enough about cooking tofu to say where, though.)

I believe you can also substitute coconut milk for the liquid ingredient in any fruit/nut bread (banana bread, carrot bread, apple bread, and so on), provided that ingredient isn't buttermilk (Her Ladyship Chemistry is involved in that one). My aunt's banana bread is made that way, iirc.

The ubiquitous Thai Green Curry is easier to make than you'd think, and by making it from scratch you can avoid fish sauce and other things made from fermented seafood.

What I do is to blenderize a handful of cilantro/coriander (stocks and all) and a handful of Thai basil (has as mintier aroma and neat purple stalks).

The rest of the ingredients are very similar to Tep's soup recipe above. I use shallots, lemongrass, garlic, ginger (I have never been able to find galangal root), seeded thai chilis, a little sesame oil, a little soy sauce, and the zest of a lime (I haven't been able to find lime leaves).

All those things are added to the already pulverised ciliantro/coriander and basil, and given a final blending. The result should be a disgusting green paste. Throw it in the frying pan and let it sautee for a few minutes (mostly to cook the shallots) and then add half a tin of coconut milk. You will taste it and find it unsatisfactory. That is because at this point, the miraculous addition of simple sea salt will complete the transition from disparate ingredients to the classic green curry flavour. You may at this point decide to add more coconut milk. Never add the whole can without salting it and tasting it first, as the salt changes the flavour quite dramatically.

This is why I prefer Indian curry pastes - they dont have the fish sauce in them (not sure if they really are vegetarian tho? I'm not a vegetarian so its moot to me).

I always wondered wtf cilantro was - its coriander! Of course. God I hate that stuff. I'm crap with Thai food as a result - I loathe coriander and lemongrass and chilli! heh. But I love sweet sweet mild coconut curries, like yellow (kari kai) curry, and satay.

Damn I'm hungry now.

Onions + garlic heated in oil till they brown, add tofu in tiny strips, black pepper is grebt at this point. When fried to your liking add coconut milk, curry powder (Sherwoods Extra Hot or just Hot will do), tomato paste (not too muc), vinegar/tabasco, cheynne pepper and other such sundries to taste and cubed potatoes + add water to cover everything. Simmer covered till the sauce gets a good consitency, add chick peas with about 15 minutes to go. Serve with rice and other yummy things. That fine?

i got this off the internet but i had some on sunday afternoon so it popped into mind:

Tom Yum Tofu

Ingredients:

1 1/2 pints vegetable stock
14oz coconut milk (tinned is fine)
3 tbsp chopped coriander
1 large onion chopped
3 cloves garlic crushed
1 or two fresh chillies chopped and deseeded
1 tbsp groundnut oil
250g tofu cut into half inch cubes
2 stalks lemon grass peeled and bashed
8oz tomatoes (tinned is fine)
half a cup dry Thai jasmine rice, cooked
Directions:
Place rice in rice cooker (or just cook rice). Place cubed tofu on a lightly oiled baking pan and bake in a medium oven for 20-30 minutes, turning occasionally.

Meanwhile, sauté onion, garlic, lemon grass and chillies in oil until onion is cooked through. Add tomatoes, stock and coconut milk, bring to light boil and then simmer. When tofu is cooked, (it should be a bit dried out and maybe starting to brown a little), remove from oven.

Fish out the lemon grass stalks and discard. If you have a handheld blender, whizz the soup until smooth (optional). Then add the tofu and coriander.

Spoon some rice into a bowl and top with the tom yum and serve.
