That "old buffalo breath" chili recipe looks awesome! I'd love to try to make good chili wihtout tomatoes, but it sounds a little like trying to make great British food without a thin coating of detergent-scum. I've found, however, that you don't need mesquite chips to get that "haunting smoky flavor." You just need to not stir it for about thirty minutes and then some of it will burn to the bottom of the pot, which imparts a certain eerieness.

I ain't gonna talk bad about chocolate, no matter how you make me try, james. I'm guessing you're talking about baker's chocolate here and not the sweet foil-wrapped kind.
