The only necessary rationale is "I've decided this is what I would like to do". If this necessitates some difficult adjustments by others, those same adjustments would be required no matter what rationale you give.

I don't think I've ever heard anyone dismiss vegetarianism out of hand aside from chauvinistic Frenchmen and Eastern Europeans. I can assure you that citing Buddhism would only make things worse with those crowds.

If you liked to eat fish every Friday, would you feel the need to claim you were converting to Catholicism when you weren't? It might raise some embarrassing questions about why you never seem to attend mass, or confession, or take communion, or even learn the catechism. Why not just say you want to eat fish?

happens to me less often than it used to but some people are really keen to draw you into a "debate" about why you're not eating meat which i imagine could be easier to avoid by citing religion. unless they're the type to start a thing about that as well (some overlap between militant meateaters and militant atheists ime, i assume militant christians too but i don't know any)

I stopped eating meat and dairy about a year ago and mostly people shrug but there are significant chunk of people that seem to want to catch me out. Like, I'll be having my lunch and they'll ask me in intimate detail about what I'm eating and will say 'hasn't that got dairy etc in it?' It's sort of banter I think but there's definitely an edge to it.

Let them tell you all the reasons why you "should" eat meat, then tell them you'd rather not. Or else just say "you might have a point there, I'll think about it", then don't. The point is that there's no debate if you don't engage.
If you want to lie to get them to shut up, just say meat makes you nauseous so that you want to throw up, and would they like you to demonstrate?
