I'm not sure if peanut butter in celery with raisins on top (a.k.a. "Ants on a Log") are low cholesterol, but it fits the rest of the criteria.

I think it's called "asparagus appointment." Anyways, it's really good. And why are you smelling your pee anyways? Does it normally smell of gardenias?

It's all told in the asparagus thread. You don't necessarily choose to smell your pee, but after enough asparagus, you can't help it. Also it turns funny colors.

OK, it's kinda awesome, but you need to be emotionally prepared for it.

I was thinking also of maybe mini-pizzas (with lo-fat chez) on portabella mushroom caps.

get a bunch of nice, colorful vegetables - baby eggplants, red/yellow/orange peppers, green/yellow squash. slice and grill/broil/oven-roast with some garlic and olive oil. when done, toss with a few tablespoons of balsamic vinegar.
slice up a block of pre-made polenta and broil according to directions on the package. meanwhile, throw together some pesto by mixing fresh basil, garlic, fresh parmesan, salt, pepper and oil to taste in the blender (yes, i know - pesto heresy but it's faster).
top polenta slices with the veggies, then drizzle pesto over.

Roasted vegetables in general are easy, taste good, and fun to experiment with different flavors. I like doing roasted potatoes or sweet potatoes a lot too.

used to roast vegetables on the barbecue. had a little basket specially for it. i don't have any outside anymore, so no bbq.

forgot to mention that oven-roasting the veg. will take about 45min at 400 degrees. not quite as good as a bbq, but still acceptable.
