for a roll, it must be spicy tuna. if with people who are intolerant of spicy, then garlic tekka is an acceptable (if lesser) substitute. as far as nigiri, i am all about: fresh water eel, fatty tuna, white fish and salmon.

I'm all about the unagi-avocado roll. And the sweet shrimp at Tomoe (here in NY). And the sea urchin at Sushi Yasuda, too bad I can only afford that place once every five years.

Vancouver is a nice city for sushi.

Spider roll: soft-shell crab hand roll. Also Ebi-fry.

As for nigiri sushi, it's smoked eel, tuna, clam abnd salmon with chives.

Right now I'm completely in love with okonomi-yaki and have to learn how to make it at home.
