These days, I love the little strips of beetroot that come in many prepacked salads.
The only bad thing about it is that it stains.
Beetroot's a useful food and drink colorant. It is used in Vimto, for example.

Violaine has been staying with us recently and the other evening the two of us were playing Scrabble in English and she kept doing things like turning 'mule' into 'temulent', 'late' into 'fellate', and 'mania' into 'sophomania' with many attendant double word scores and such, all the while saying, "Oh, I never have such luck when I play this in French". I rather harshly uttered the ILE curse, "Go eat a bag of dicks." She looked at me incomprehendingly and I said, off the cuff, "Va manger un sac de bites." Well, she had assumed by 'bites' that I didn't know the word for beet in French and had simply inserted the English word as is, sadly, my wont. The next day when I got home she had made a lovely beet salad with goat cheese in a terragon vinaigrette. My girlfriend, of course, loathes beets and she took it almost as a form of aggression. The little coquette meanwhile looked at me, smiled as sweetly as can be, and said, "Les beets, on en mangera ensemble mon cher Michael." Is this love or war? When they're done, you can easily slip the skin off, under cold water if they're still oven temp.
Cut them up to bite sized chunks, and add some vinegar, oil, salt, pepper, and herbs.

My gf's mum makes amazing beetroot soup. Seeing as frequent visits to Gdansk are impractical, inferior but still good beetroot soup can be obtained from Hajducek, a Polish restaurant a short distance from my home.

Not very much.
Beetroot, quartered and roasted, is so so good, warm or cold. Especially yum when roasted with parsnips and rutabagas and turnips and carrots in a mix of gorgeous fall root vegetable colors, so earthy and sweet.

I LOVE BEETS I LOVE THEM I LOVE THEM SO MUCH.
When I was four I'd get in trouble with my mom for going to the garden and digging her beets up and eating them like popsicles. It's not exactly inconspicuous when you leave big piles of dirt around and have magenta stains all over your face. I ate almost all the beets. JUST FOR ME HAHAHA THEY ARE MY BEETS

I boiled the beets whole and then sliced them and put goat cheese on top. The beet greens are sauteed with garlic, olive oil, S&P, and rice. The beets are from a neat farm right here in the city--we have so many uninhabited and destroyed buildings that someone decided to put a community farm on a big patch of vacant land. The greens were especially fresh and yummy.

I roasted some beets for the first time yesterday, and ate one cut up with blue cheese, olive oil, kosher salt and balsamic vinegar. Very nice! The red pee later was pretty funny, esp. since I also had blanched asparagus, so it was smelly red pee.
