What can I do with a chicken breast?

I've got two, and they're defrosted and ready to go. I don't want to make a chicken curry, nor do I want an Italian tomato-based sauce. WHat else is tasty and I can make with a chicken breast?

A good recipe that I think I got from Nigel Slater in the Observer:

Flatten them out a bit with a rolling pin and fry for a couple of minutes on each side, until they're *just* done in the middle. Spread a teaspoonful of pesto on the top of each one, cover it with a thickish (3mm or so) slice of mozarella cheese, then put it under a hot grill until the cheese is melted and browned. Whilst it's doing that, put another teaspoon of pesto in the pan with the chicken juices, and heat it up to make a bit of a sauce to go with it.

Last night I grilled some with just cajun spice on it (lots of it.) I ate it with tomatoes and spinach. In fact, I'm having that same thing tonight because it was so good, and it took 10 minutes to prepare.

I had it with a sweet and sour sauce last week, so I'd rather not. Besides, sweet and sour sauce is a pain to make - I end up using a quarter of a pepper and wasting the rest.

Has anyone got a decent recipe for curry sauce? I've tried a few, but they always taste inferior to the chip shop curry sauces.

I'm loving the pesto plan above, mind.

Although the chow mein idea's a goon'un as well.

If the breasts don't have skin, you can make chicken picotta, it's really easy. Flatten em with a mallet or 2x4 or rolling pin or something... sautee some onions and garlic... make a mixture of 1/2 cup flour + salt and pepper... dip the chicken in there and then brown them in the pan with a little butter, 2 or 3 minutes each side, add the onions and garlic back in, turn up the heat and pour in a couple of splashes of sherry, lemon juice, and capers. mmmmmm. garnish w/some extremely thinly sliced lemon and parsley.

Put between two pieces of clingfilm and bash with something flat until it's very very thin, then pan-fry with a little butter and a lot of tarragon, maybe some lemon juice. Serve with new potatoes, and... oh, I don't know, some kind of vegetable.

Or stir fry with the juice of a lemon and a tablespoon of honey!

Slice chicken, fry in a wok (or any hot pan) for ±3 mins., add 1 tablespoon of lemon zest (cut into the smallest possible pieces) and 2 teaspoons of sambal oelek, fry for another minute, add 3 spring onions (sliced in 2cm/1 inch pieces), fry another minute. Lower the fire, add 1 tablespoon of grated ginger root and 2-3 tablespoon of oystersauce. Heat for another minute, add 50 grams of cashew nuts and a handfull of fresh coriander and you're ready!
Serve with white rice (preferably basmati, but any kind is okay) and a beer.

yeah :( it was one of those kettles that's fixed to the wall, and the water goes into it from a pipe... some loser thought it was really funny to open the lid and drop a soap in and so soap water comes out. it ruined one of my pot noodles. i bought my own kettle since. i should have just bought myself a whole kitchen in my room.
