That really spicy mustard they have at Chinese restaurants

I love it. Is there a special name for this kind of mustard? What do they use to make it so spicy? It's a different kind of spicyness than, say, chili peppers, because instead of making your mouth feel all hot, it just goes up into your sinuses and makes your eyes water.

I think I know what you mean, although that's not my favorite stuff. The stuff I like it only ever at hunan restaurants, and it's basically a little dish of oil with some kinda seeds in it, and it's So. Fucking. Hot. Hottest thing ever. And that's high praise.

What kind of sandwich would you recommend using the spicy Chinese mustard on? If it's horseradish, then I guess the most obvious answer would be some kind of roast beef. I'm vegetarian, but don't restrict your answers solely to vegetarian responses just for me.

I think if you're dedicated to spiciness, you can put it on anything you would ordinarily put mustard on, and a few things you wouldn't. Mustard can be its own reward, no?
