I believe it has it origins in some war many years ago when bows and arrows were a major part of warfare. When captured by the enemy, an archer would have the two fingers that he would use to pull the bow back chopped off. For archers it was a mark of defiance to demonstrate the fact that they still had theirs intact prior to firing pointy bits of wood at the enemy.
