I worked at a Middle Eastern restaurant for about a month (before I decided that waiting tables is mot my thing), and they would make pita bread by rolling up balls of dough and mashing them against the inside wall of a round clay oven, and cooking them until they bubbled, then peeling then off with this iron hook thing. It was the best damn bread product I've ever had. Pick up a big piece of feta in that? Oh, man.

I went to a Nicaraguan seafood place last saturday and they had really thick corn tortillas.. I'd never had them before and got stuffed off them... really kick ass.
