inspired by the okra thread, i have just done a round-office survey in my lunch hour - the overall result was tomatoes in 1st place, potatoes in 2nd and parsnips in third. (someone did vote for both chervil and nettle but i marked their ballot as spoiled). anyway, let's have yours in order of preference. feel free to provide reasons for your decision - and feel equally at liberty to include peas, despite what mark s might tell you.

My sister says if she could only eat one food for the rest of her life, it would be potatoes because that includes chips, crisps, mashed, baked, roasted, boiled, gnocchi and dauphinoise. Personally, I'd prefer cheese. Does the mould on cheese count as veg?

Red cabbage is great! My dad makes this cole slaw with red cabbage and beets and lemon juice that is le bomb.

Tomato. If you have to ask why, you have not fully considered the magic that is a tomato.

Onion. Ditto.

Corn. Off the cob it's merely ok, but without corn we would have no corn chips, no crispy taco shells, no corn tortillas, no cornbread, no polenta. The world would be very sad without corn.

Spinach. Make a salad, make a side dish, add it as an ingredient, put it on a pizza. It's delicious.

Carrot. Because carrot juice may be my favorite thing in the world.

Cucumber. Because there's nothing cooler. I can eat a whole bowl of cucmber in a sitting, with a little light oil and some pepper, maybe. Or maybe just raw. It's like watermelon, only green.

I love leeks, Cathy. When we make a roast, I often cut leeks into long thin strips and lay them on a an oiled cookie sheet with a drizzle of olive oil and salt on them to make crunchy leek strings.

Omitting the tomato which is a fruit and so far beyond any other foodstuffs in bringing me pleasure:

Its funny, I used to hate carrots, corn, peas, pumpkin and tomatoes as a kid. Now I love them all. And I think it is entirely down to how they're prepared. A lifetime of mum's very english "boil everything to mush and add salt" cooking put me off many veg. Then I tried things like peas simmered with fried onion, pumpkin scones, and fresh tomato with olive oil and basil on crackers... and well, I changed =)

beets are incredibly good. i bought some at the farmers market in front of city hall, which ended in october, but only ended up eating them last week because i noticed they had grown even more elaborate tops. anyway they were incredibly sweet and such a lovely color.

I avoided this thread the first time through. I love too many vegetables to snub any one of them. Ardent vegetable love oozes from my pores like musk from the glands of a civet cat. However, in the spirit of lists which overtakes this festive season of the year, I will stop banging on and list five vegies which I greatly adore:

asparagus (the monarch of vegies)
pea pods
onions
curly kale
winter squash (turban or butternut are v. nice varieties)
