Homemade mayonnaise is pretty good. Otherwise, blecch. I like mustard fine, catsup no. In the south they make this stuff called chow-chow, kind of onions and peppers pickled, in a jar, you put it on beans and such, a bit like something Korean.

I think the problem people have with mayo is that its color and texture makes them think of it like it's a dairy-based sauce. Hence Shakey's 'boiled milk' comment. It's just a vinaigrette with an egg (yolk) used as an emulsifier. Why would that be gross hot? You guys like salad dressing, right? You guys like eggs, right?

Mayo in it's most common form just doesn't do anything for me. I don't notice the flavor at all, so why even put it there? Oh, because I'm a fat American! I'm happy to have some kind of fancy schmancy ailoi on my sandwich.

Ketchup is good as a shortcut in some recipes, but it's also the worst thing I could imagine anyone doing to a hamburger.

You know the worst thing about ketchup? When you leave some on the plate, then dump the plate in the sink without washing it, and then you come back an hour later and the whole kitchen has that nauseating sickly-sweet "KETCHUP WAS HERE" smell. It's enough to turn you off ketchup entirely.

Mustard wins here -- there's just so much more going on with mustard, there's no competition. But you can't put mustard on fries, so for me mayo comes second. Hellman's is the best everyday stuff (I understand it's called Best Foods mayo in California? Freaks.) but the luxury mayo is Trader Joe's. All light and creamy and with that all-important bite of vinegar flavor. Check it out, yo.

Ketchup is... around. It's ok on fries, I guess, and maybe chicken strips, but mostly it's a waste of good tomato. It tastes like somebody got halfway to making barbecue sauce, got really lazy, and decided to just dump a bunch more sugar in and call it a day.

the problem i have with mayo is that it makes me nauseous. i can tolerate it in very small amounts in egg salad or tuna salad, but no one but me ever prepares them with "very small amounts."
