They are tradtional food from places throughout central America. I think in el Salvador they use banana leaves. As a mexican dish it consists of masa (made from corn, lime and lard) spread onto a dried corn husk. Then some meat mixture (usually pork although there are many variations) is layed inside. the husk is rolled up, the tamal is placed standing up in a large pan and the whole lot is steamed.

It's tradition to make them on xmas eve and whole families become involved, assembly line. B/c they take so long to make dozens and dozens are made at once so tamale feasting lasts a good lone while. yum. I usually like mine just with salt. sometimes with salsa or eggs.

The husk holds everything in and helps cook it. The masa starts out kind of thick and stiff. But after the steam-cooking it turns very moist and crumbly. With no husk the whole concoction would fall apart! Also, like the taco, historically the tamal was a great traveling food. Had it's own container so was easy to pack for when you're away from home.

See, because of how ingrained the tradition of Christmas tamales is in my family, I didn't even know that OTHER families ate turkey dinners for Christmas until I was around 20 or so. I kid you not; I thought turkey was strictly a Thanksgiving thing! But I've still only had a Christmas turkey dinner once in my life. I've had tamales many, many more times, including the assembly line family-made ones that Sam talked about earlier. And it is a hugely labor-intensive thing, too, though with enough people a family can churn out dozens and dozens of tamales before the night is through. (Very messy, too; when I was a little little girl and some members of my family would do this tamale assembling thing, I was one of the masa spreaders and my arms would be covered with masa by the end of the day.)

My GF's mom can make dozens and dozens in an afternoon. A finely-tuned family machine can make hundreds. Not saying it ain't a lot of work...
