Alinea's not going anywhere, it's Grant Achatz's place, from Trio. Chicago is the center of Ferran Adria-inspired cooking right now, the way New York is becoming the center of the Fergus Henderson and Mario Batali offal revival (except NY's just the American center; Chicago's embraced Adria more than anywhere outside Spain).

There's a lot of Alinea stuff on Egullet -- Grant posts there, and was very open about the process of designing the restaurant -- everything from the custom-made serving utensils for specific dishes to lighting to the procession of the tasting menu. I don't have a link handy, but look for the Alinea Project sub-board.
