I do love caprese sandwiches, tho. Man, I miss the ones at Panino's in Evanston, where they just drizzled a fuckload of olive oil on 'em.

Caprese: fresh mozzarella and tomatoes, often also with basil. Dressed with either olive oil or balsamic vinegar, and sometimes fresh black pepper. This sandwich appears to also have olives.

I generally prefer mine on a rustic bread rather than the focaccia shown here, or the baguette that some places use.

So I just had a caprese sandwich (of course: I mean, I read this thread right before leaving for lunch), and I'm really happy, because I was about to write off Cosi for good, on the grounds that their bread was WAY too salty -- until someone informed me that it's only the Cosi on the corner of Jackson and Wabash that makes their bread like that. So I walked a couple of extra blocks to the one across from the Art Institute, and lo and behold, the bread is great! Not salty at all! The subtle flavors of my caprese were not overwhelmed!
