favourite super-quick or super-easy and just plain super-tasty meals?

I'm posting this because i'm overworked, short of time but still managed to have a fantastic dinner last night:

take 2 portabella mushrooms per person, remove stalks, thickly spread with *really good* butter on the brown underside, crush a fat, fresh clove of garlic over each and spinkle with a little chopped parsley. wrap them in tinfoil, then put them butter side-up in an oven preheated to 180C for 20 minutes. make 2 pieces of white toast, preferably really chunky, hand-sliced posh farmhouse shizz you get from a baker like degustibus or somewhere like that, butter and put a mushroom on top of each slice.

this is a fantastic meal and led me to think other people must have some more great, simple tricks up their sleeves.

If that's your idea of a 'fantastic' meal you should widen your culinary ambitions. That's a starter, man.

Fresh pesto genovese rules. Put the water on to boil. Crush a clove of garlic with sea salt into a paste in your mortar. Add plenty of basil leaves and pine nuts. Continue to batter until it's a paste. Add a decent amount of grated parmesan or pecorino cheese and continue to make into a paste, a bit more half-heartedly. Pour in decent olive oil and stir it in. Has the water for the pasta boiled yet? Probably not. Cook it, drain, stir in the pesto. Eat. Do not kiss anyone for at least ten hours.

Brick of tofu, cubed (and pressed). Hot skillet. Brown up the tofu in olive oil, splash in a bit of soy sauce to your liking. Grind black pepper over the top. And, here's the magic bit, sprinkle nutritional yeast ("hippie dust") liberally all over the goddam place.

Eat from a bowl w or w/o rice. Yummy!

(more of a snack than a meal, really). I'm going to try that portabello mushroom meal TONIGHT.

flatten your chix breasts, grill em, and whip up some make lemon & buttersauce plate, & add capers. done. 15 minutes or less. Steam some broccoli while your at it. Enjoy.

-- sfxxxx - another thing that is KEY to making a really good meal in minutes is a properly stocked pantry and freezer. If you have stuff on hand it takes no time at all to thaw chix in microwave and also I even keep meyer lemon juice frozen into little cubes (they're seasonal but make the best piccata) so they're ready to go when you are. Same for broth when I make it, I make cubes and its not that salty rot you buy in cans.

Lately:

1) toasted corn tortillas, canned black refried beans (Goya or Ducal only), microwaved diced onions & sweet peppers, cheap Mexican hot sauce (Tapatio extra hot, usually). Typically $2.50 for 60% of daily calories, with the main nutritional downside being excess salt and some sat fats from the canned beans, and a woeful lack of greens.

2) whole wheat kulcha (indian flat bread) + canned fava beans (California Kitchen's "Saudi recipe") + Sriracha. Thank heavens for cheap import grocery warehouses. Again, about about $2.50 for 60% of daily calories.

The other 40% alternates between elaborate salads, actual cooking, and alcoholic beverages (which you can thank for this posting).

roast a yam in oven, 45 mins. sautee brussel sprouts, 15 mins. pan fry meat (sausage, steak, pork chop) 15 mins. kind of my go-to lately for dinner. not super fast but super easy, good for getting sw0le.
