In Praise of Brown Rice

As long as it's thoroughly picked over and rinsed (and preferably pre-soaked), and then well-cooked, it's a great food I need to get back to preparing. Tasty, nutritious, gently high-fiber.

(Even though this is an "in praise of," I don't really mind if people want to post anti-brown-rice rants here too, not that anyone is likely to be overly concerned about my feelings in the matter, but anyway.)

IF you boil brown rice in chicken broth and add just a little bit of butter (or margarine if you're me) just prior to serving, like, when you're fluffing it up with a fork, OMG, it whups white rice's ass. I should try it with a soy-based broth to see if it's equally rockin'. Anyway. I've had brown rice prepared that way just on its own for dinner, and it really does hit the spot.
