xpost yr welcome, actually I've seen real authentic good quality Italian restaurants serve the bread that way, with just the halved roasted garlic and you squeezed the now-paste-like garlic onto the bread. It works just fine!

Our family method is to heat buttered slices of sourdough in the oven, then run them under the broiler briefly to brown them and give them a hard toasty top. When they come out, rub them down with a garlic clove -- you'll get a fair amount on there. Don't use margarine -- it's at least 1/2 water and will make it hard to get a toasty top.

This was just about my favorite food when I was a kid. I had my tonsils out at one point, and the first night back home from the hospital, my mother made spaghetti and garlic bread for dinner. I threw a pretty big fit because I had to eat pudding and ice cream instead of garlic bread.

my ultimate garlic spread:

you need garlic in three different stages 1. roasted 2 sweated 3. totally raw.

you get the smoky 'bass' of the roasted, the 'mid-range' sweated (or par-roasted) and the joyous 'top-end' of the raw (just a bit goes a long way). mix to taste. full frequency and stores easy too for pissed snacks.
