I think it's just flavorful, the way certain mushrooms are flavorful. For example, when my mother makes soup with shitake mushrooms in it, the flavor of the mushrooms tends to overpower everything else. Also, I heard someone recommend to a vegetarian wine that would go with red meat as an accompaniment for asparagus.
