How does sausage count in the meat universe? Is it a meat unto itself or is it a conglomerate wherein the MEAT is unspicy but the, uh, spices are spicy? This is a question I've never considered before.

I think it's just flavorful, the way certain mushrooms are flavorful. For example, when my mother makes soup with shitake mushrooms in it, the flavor of the mushrooms tends to overpower everything else. Also, I heard someone recommend to a vegetarian wine that would go with red meat as an accompaniment for asparagus.
